Okay, you had me at one pan and taco. The only change I would make would be to use Rotel instead of regular diced tomatoes and also do a mixture of pinto and black beans. Also, minus the noodles this would make a great filling for burritos and as a topping over tortilla chips for nachos.

I will definitely make this tomorrow. Since I've run out of taco and tostada shells but have all of the ingredients you've mentioned, this is perfect! The only pasta I have on hand are udon noodles, so that's what I'll use. Thanks for sharing, Dave! Enjoy fishing! 😊

@@TheCooknShare Yup - original is good! I make it often, usually wrap in tortilla w/ shredded cheese to make a burrito. But this one IS a retread.
You could garnish this with crushed Frito chips for that added taco “crunch”
