How to make Lamb Koftas - Ep. 81

  • These koftas are amazingly quick and simple to throw together! And to make matters even better, they taste phenomenal!
    Ingredients:
    1kg of lamb mince
    1 large handful of parsley
    1 handful of coriander
    1 tsp of coriander seeds
    1 Tbs cumin powder
    1 tsp paprika
    Salt and Pepper.

    It was funny to watch this as a Turkish person who loves to cook köfte. I think you did a good job. A quick recipe I use is this: I make the köftes half as big as yours and simply cook them on a flying pan. Then I make some tomato sauce with butter, red peppers and tomato puree. I fry little pieces of bread in butter in the same frying pan then I prepare the plate: I line the bottom with bread, put köftes on top, pour the tomato sauce on top of these and put some yogurt to the side.     You can prepare a kilo of köfte and freeze them raw so it will be quicker. It is also a good way to use day old tough bread.

    Is that tzatziki sauce? Looks like they'd be very good with some tzatziki.

      Very similar, its greek yoghurt, mint, coriander, garlic and lemon juice. I had no cucumber!
