Perfectly Juicy Thighs and Breasts - [Butterfly] Spatchcock Chicken

- Do you struggle to roast a whole chicken, get dry breasts and juicy thighs - never fear for I am here!
Now you can have juicy breast and thighs! By butterflying you chicken everything gets cooked at the same level meaning your chicken cooks uniformly and your get a super crispy skin, but juicy soft meat across the full chicken.
Layering butter between the skin and the breast adds to the succulence and richness to the meat. Sensational.
By adding you favourite veges into the cooking dish, all the garlic, thyme and butter goodness gets cooked into the veges.
Ingredients:
1x whole chicken (butterflied)
50g butter
1Tbs thyme
1Tbs chopped garlic
Roast veges of your choice
Fresh Thyme and parsley
Salt and Pepper
Splash of oil.
Bake at 180C for 45mins or until internal temperature of breast is around 66°C or clear juices.
