    This recipe looks delicious! That cheese sauce really tied things together well. That was so nice of you to make this from scratch for your wife on a weeknight considering how busy you must be at work these days.
    I have a rice tip for you. When I make Spanish rice, I sauté the dried rice in oil over high heat stirring constantly for about ten minutes until it has started to brown. I think gives it extra flavor, kind of like you get when making roux for gumbo. Also, if you want rice that’s a little fluffier, that’s not all stuck together, use the knuckle method as I call it. Add liquid until it’s far enough above the rice that when you stick your finger in the pot to touch the top of the rice, the water comes up to your first buckle. Next, boil the rice uncovered until you see holes forming where the water from the bottom of the pan is bubbling up. Most of the water should be gone at this point. You will hear it boiling underneath the rice, but you won’t see it. Cover the rice and turn the heat down to the lowest setting and cook for 20 minutes without lifting the lid. My gas stove is still very hot on the lowest setting, so I put the covered pot off to the side so that only one edge is touching the flame. I reposition it 3-4 times over 20 minutes so that opposite edges touch the flame alternatively. My rice always comes out perfectly light and fluffy this way just like it was cooked in a rice cooker.

      Yes, I had a griddle years ago. It was a different one, but I ended up giving it away. I’m glad I got this new one. I’m kind of trying to learn the griddle all over again.

    I've been subscribed for nearly a decade and I gotta confess, I haven't really paid much attention in the past couple years at least. If I may, I think if you did more competitions and chronicled everything leading up to the event you might get some new followers. I mention it only because I thought that was where your channels was headed a few years back.
