    The gulf crab makes a whole lot of difference here. The cast iron pot literally kept the food hot and ready for over 1 hour. Beautiful. Thank you. Be blessed. 🦀

    I do appreciate a visual. I’ve been trying to follow the jambalaya calculator online, but this is much more helpful having a visual for how the food should look at various steps in the process.

    Looks great. I would just add cayenne, bay
    leaves, thyme, & Cajun seasoning. I’m gonna cook it this week, but add chicken too.

    The point of washing the rice is to remove as much of the starch as possible because if ya don't it will end up mushy and sticky as opposed to fluffy and singular, 2-3 rinses is usually good enough.

    Man, I tell you what! This recipe was my first try after leaving New Orleans 25 years ago. Had a reunion in Gulfport MS, got some Shrimp and lump crab from the fish market, only thing missing was Y'all seasoning. Used Tony C instead. Flavor was off the chain! Made sure I wrote down my measurements of the spices so I'll ALWAYS have that flavor. Thanks so much for sharing!!! Making Y'all red beans and rice today!

    Looks great. It’s the starch he washed out of the rice. Excess starch makes rice sticky. By washing it out your rice turns light and fluffy and the grains seperate more easily 👍🏻

    My Mom and Grandparents are from Jennings La. and I grew up eating Jambalaya that my Granny made then my Mom passed the Recipe down to me . They always made Chicken & Sausage Jambalaya so I make it for my wife and extended family every now and then . I also learned my family Recipe for Okra , Chicken & Sausage Gumbo which is what even my friends request more then the Jambalaya !!! Two great Cajun Dishes that any decent cook man or woman should know !! Oh and I dont make Gumbo without my Moms Potato Salad that has some Mustard in it which really sets off that Gumbo broth . Its less Mustard then German potato salad but it does have to have a light yellow tint to it ..... That's how ya know it's done just right !! LET THE GOOD TIMES & FOOD ROLL !!!!

    Brett, I appreciate your cooking videos. I was born in New Iberia and am in Baton Rouge and grew up just 2 blocks off of Scenic Hwy and the big 'A Bear' sign of the Charles Hebert stores and Esso gas stations across the street from the refinery and was friends with two of his sons Mike and Charles, Jr. You obviously know how to cook. You look like you might be somewhere in Acadiana maybe between Breaux Bridge and Crowley? Anyway, keep up the good work and may God bless your family.

    Looks good. I'm a Cole too David. Had a younger brother name David that went to the Lord in 1998. Just found your channel. I was raised in East Texas. Orange to be exact. Grew up with this kind of cooking. I miss it so much.

    I sure do love watching the videos of yall making the Jambalaya, the gumbo, the potato salad, and the red beans/rice/sausage, I grew up in Louisiana eating those foods and man do I miss the homemade foods, I would like to see yall make a baked spaghetti, with a chicken stew if possible :)

    Man I used your recipes for your gumbo and red beans and it was fantastic. I'm making jambalaya tonight. I'm originally from Louisiana and I have been trying to get my gumbo and beans right. And man using your recipes I hit the jackpot. My friends here in Orlando Florida are sure enjoying it.

    I made this recipe today. I had whole shrimp with heads on and made stock with the heads, tails, and shells that I used. This came out very tasty but my rice was mushy. I do not know what I did wrong. Perhaps did not wash rice enough and a bit too much liquid. I will definitely try this again in the future and will let you know how it turns out. Thank you for the video and recipe. I was wanting an authentic cajun recipe and this is totally what I wanted and you guys are a blessing yourselves.

      The cook on the rice in this video is too long, that's why your rice was mushy just like it was in this video. Cut back to 20 minutes, take it off the stove and let it set covered for 15 minutes without touching it.

    I am crying right now because I gave my iron skillets away because they got to heavy for me to lift. I am up 74and old age has caused me to make adjustments in my life. Stop using that spoon, the sound is driving crazy always use wooden spoons please. Enjoy watching you, I still have my iron Dutch oven. I use to make all kinds of things, makes a great rump roast on top of the stove
