BETH OATMEAL CHOCOLATE CHIP COOKIES
Makes 15 3” Cookies

INGREDIENTS:
½ cup (120g) butter, softened
½ cup (100g) white sugar
½ cup (90g) brown sugar
1 egg
1 tbsp (15ml) vanilla extract
¾ cup (90g) all-purpose flour
½ tsp (2.5ml) baking soda
½ tsp (2.5ml) salt
¾ cup (45g) Old Fashioned Oatmeal
¾ cup (110g) Dark Chocolate Chips
1/3 cup (50g) walnuts, chopped
1/3 cup (50g) unsweetened shredded coconut
METHOD:
Preheat oven to 350F(176C).
In the bowl of an electric mixer, beat together the butter and sugars until light and fluffy. About 5 minutes.
Then add the egg and vanilla extract. Beat together.
In a separate, small bowl whisk together the flour, baking soda, and salt. Add the dry ingredients to the mixer and combine, scraping down the sides as needed.
Then add the chocolate chips, nuts, and coconut. Beat to combine.
Line a baking sheet with parchment paper. Then scoop out 6 scoops of dough with an ice cream scooper (2 oz size).
Bake on the lower third rack for 15 minutes. Edges of cookies will be golden brown and centers will be just set. They should not look wet, but “just set”. Removing them at this stage will make them nice and chewy!
Allow the cookies to cool for 10 minutes on the baking tray. The residual heat from the tray will continue to set the centers.
Transfer the cookies to a cooling rack and allow to cool for 30 minutes (if you can stand it!) the flavors will be even better as they cool, and the cookies will have a beautiful chewy texture!

I just made these for my family! My boyfriend didn’t want the walnuts but next I will add them. But… this was the perfect oatmeal cookies I have ever tasted! My daughter hate oatmeal cookies and loves them. These are not your typical oatmeal cookies. The chew and the crunch together is peeeerrfect. Just the right amount of sweetness. This recipe will balance the taste of walnuts for people who are not a fan. I can tell. Definitely a save in my book! I’ll report back when I add the walnuts and coconut.

I made these today and followed your instructions to the letter. These are the most delicious and perfect oatmeal cookies I have ever tasted in my life! Thank you for this recipe Beth. Made these yesterday! This recipe is perfect! (Along with all the tips). I added golden raisins 1/3 cup w/ the nuts & chocolate mini morsels & coconut and also a 1/2 teaspoon of rum extract... They were even better with the raisins!! Added a nice sweet chew to the already chewy cookie!!

My family loves oatmeal raisin cookies - I prefer chocolate chip cookies - this is the perfect middle ground 😍😊🍪
Ha! Right?! Or instead of the chocolate chips, add raisinettes! Then you'd have the chocolate and the raisins represented! :) SO good!

These are DELICIOUS, Beth! I can't have gluten or dairy and substituted gluten free flour and oats and plant based butter. But they are AMAZING. I even already wrote the recipe down in my file. And your note to eat them after they've cooled is spot on. Warm, they're yummy. But cooled down, MAGNIFICENT! Thanks so much for sharing this wonderful recipe!

Great recipe & episode. I remember watching an episode of The Test Kitchen & they explained why to put cookie dough in the fridge. If I remember it causes the sugar to change & have a Carmel effect. I did it once & Agee with you 100%. Best cookies come from the mixer.
Right?! I don't know what all that "refrigeration business" is about?! Unless you have a cookie dough that is just too soft like gingerbread or Linzer Cookies that actually need the chill to be able to form them, my motto is "Do Not Delay, Bake right away!" LOL! :)

Excellent question! You need what we would call the Old Fashioned Oats this is what they look like. amzn.to/2S8o7OB The instant/quick cookie wouldn't give you the same texture. They would kinda disintegrate into the cookie and act more like flour, which would probably give you a cakey cookie. So best to search out the old fashioned! :)
These turned out super sweet - good but super sweet just like Beth's Ginger Spice cookies really SWEET. I measure with cups and not grams - and I had to add an extra 3TBSP of flour because my first batch spread so much and did not hold their shape. I am turning them into ice cream cookies and Beth suggests on her blog. I think they are too sweet to eat at room temperature.

Hi Beth, I just discovered your channel when you were touring your french home. I love oatmeal cookies of any kind, however, I have a kid with a nut allergy. How would you tweak your recipe to compensate for not adding the nuts? Thanks.
Just dont use nuts love its just an additive
HI I made the cookies today and they taste really good. However, they really, really spread. I did leave out the walnuts and coconut do you think that is why they spread so much? I chilled 3 of the mounds of dough and they still really spread. Could it be the difference in flours?
Oh yes if you leave out the coconut and the walnuts they were definitely spread a lot more the walnuts and the coconut give them structure so that the cookies don’t spread out as much and I also find it binds them together a bit better to
Does this recipe double and triple easily? I would love to make these for the mother's at my church along with a homemade jar of strawberry jam. I am also a big fan of white chocolate chips and cranberries with oatmeal cookies.

Oh sure leave them out, and add either some Health Toffee Bits :) or just 2 tbsp more of chip and 2 tbsp more of coconut :) Hope you enjoy!!

Can baking powder be used instead of baking soda?
Beth, could you do a "Myth vs Truth: Baking edition"?? 😅 I've heard several say that leaving the cookie dough refrigerate over night helps develop the flavors more but I don't know if that's really (or at least always) the case...
Oh that's such a great idea!! Yes it really depends on the cookie dough! If the dough is really soft and needs to be refrigerated in order to be rolled out and formed like gingerbread or Linzer cookies, then yes! But otherwise I say bake right away! :)

No Black Strap is very bitter, it's interesting it has to do with the times it is boiled, but for these cookies brown sugar is all you need :). Hope you enjoy!

Ahh yes so skipping the nuts and coconut would definitely make a difference! Since there wouldn't be enough "fillings" to allow them to hold their shape. Next time fill that same amount with extra chocolate chips that would prevent them from spreading out too much :)

Ha! Yes you can absolutely swap the chips for raisins, and add 2 tsp of cinnamon and 1 tsp ground ginger to the dry ingredients too! This recipe makes 15 (3") cookies. Hope you enjoy!
