Why NOBODY Eats this FISH- Catch Clean Cook -Sailfish (Kola Fish)

  • After many failed attempts, Brook and I finally put a sailfish in the boat for a catch clean cook. We have caught several sailfish this year, but most of them were undersize as sailfish have to be 63" to keep from the lower jaw to the middle of the tail. Atlantic Sailfish are one of the fastest deep sea fish in the ocean. The sailfish we caught was hooked in the tail and was pretty lifeless when we got it on the boat, nothing we could have prevented. I'm happy we got to do our catch n cook with a fish that wouldn't have survived anyway! Most people smoke sailfish and make it into dip, but i wanted to see how it did on the grill!

    Back in the 60's when I was 14 my dad caught a 7 ft sail and he had the head mounted and had the rest of it Hickory smoked and I never forgot ,it was the best fish to this day I have ever eaten.

      ABI, they became like Redfish... over fished. They were taken for trophies, not meat AND it destroyed the population. Either way, they are more fun to catch than eat.

    I don't think I've every seen anyone else without a culinary degree cook as good as Victor does, all of his catch and cooks he does always turn out looking so good no matter what species he is cooking.       I agree. I am shocked how the younger generation of anglers, especially doing "catch and cooks" cover the fish with heaps of all sorts of artificial spices. Please, if you read this, try to go back to basics: salt, pepper, butter.

      @@etiennebotes salt pepper and olive oil if you want a bland ass meal. yogurt is one thing, (I wouldnt try) but theres nothing wrong with marinading, especially with a tougher meat, it tenderizes it. I'd hate eating if everything I ate was seasoned the same with just salt and pepper lol

    we've always bled them when we catch them. less waste that way. it taste excellent with a lime jerk marinate and is also good fried.

    We in Sri Lanka frequently eat them, but mostly, as curry with rice, yes with a ton of spices and coconut milk. (Sri Lankan style)
    It is also eaten as deviled fish and fried fish too.

    Please make videos of the other ways you cook this! I'd love to see a sesame crusted grill, like tuna. Also a pan fry (out of curiosity of course). I think doing a butter poach would keep it moist and delicious. Awesome video!

    Man I have eaten sailfish before one that died on us a few years back and I can agree the texture is really different and I fried it up with butter and garlic. But definitely not a fish worth killing, we have plenty of yellowfin tuna and dorado here

      @@CellularFixation Way different marlin meat is actually pretty great use a lot for ceviche and to eat as a fish fillet, i think is comparable to Dorado meat. Sailfish is just not a good fish to eat, and we don't kill them as well as marlin we prefer the sport fishing side of the billfish

    I like your curiosity about different fish species, even though its still treating the ocean as a meat market. My biggest question about cooking a sailfish is if you don't know the meat and you want to taste what its really like, why marinade and over season it? Simple is best, salt, pepper, garlic and ev.o.o and maybe a lemon squeeze at serving then you'll learn what the animal was truly like. Best.

    Awesome vid 🤙 Some of us in Hawaii, steak it with bone in like salmon vs fillet. Bones increases the flavor of the fish and help prevent the overcooking because of thickness. Sear salt and pepper/oil and finish in the oven with a spoon full of mayo, butter, garlic, Hawaiian 🌶 oil, Parmesan. Less of a spoon for natural flavor, heaping spoon if you looking to pop the palette. 🤙

      Hello. Canadian here. What would you classify as "Hawaiian oil"? Because when I google it a bunch of tanning oils show up, I'm guessing that wouldn't go so good on any type of food...

      Thomas Sarwer Hawaiian chili 🌶 water or Hawaiian chili oil, you can make it yourself with what ever chili’s peppers you got local/garden or store. I use the mini Thai chili from the garden, grows like crazy!! For the water buy a 6 pack bottle Grolsh beer, drink em all. Save the bottles and sanitize. Put chilies fresh or dry in the bottle. Shove anything else you like that you have on hand in the bottle. I put fresh sliced garlic, ginger, onions etc... stuff it up. Then pour vinegar, hot water and hawaiian salt, or any sea salt. Let all the bottles sit in fridge two for you and the rest you hand out to friends and family because that’s Ohana!!! Put on everything protein, carbs, steamed Vegs, Haole Girls, etc. 🤙

      Thomas Sarwer oh yeah the chili oil is fine chopped dried chili’s from the garden/store in a pan of oil of your choice. 1-2 cups. I use peanut oil, veg oil and or coconut oil. Whatever I got on hand. Low and slow!!! Don’t over burn the chili’s but cook/fry it to infuse the oil. Find the sweet spot!! Add anything else to the oil garlic, dried onion, dried corriander crushed, ginger, anise, and whatever you like. Once it all is infused put it in a sanitized small mason jar. Store it and spoon it on everything right after you grill or cook like bbq or grilled steak/chicken. Combo it with the chili water🤯

    While I like most of my fish rare, sailfish is one that I prefer cooked all the way through. One thing I have noticed is if you do not cook sailfish all the way through it tends to be more rubbery in the pink. I found the fish was very mild in flavor. It does not have that fishy taste to it even when you cook it. The pork chop analogy was a perfect description of the texture. I have not attempted smoking it yet. I hear everyone says to smoke it, so I will try it. I just have not done that yet. I think I will try your yogurt idea too. The cook we did was super simple. Marinated in teriyaki with sesame seeds and served it that way.

    Recently subscribed and slowly watching your videos. Really enjoying them so far! Keep up the great work! I am near Tampa so very familiar with Florida's fishery! We also release 99% of the pelagic fish we catch but we did keep a sailfish a few years ago. We did sashimi, seared, poke bowls and grilled. I liked it sashimi and seared the best.       I'm 56 and I grew up was born and raised on A1A born in a doctor's office in Lake Worth and I ate many sailfish but as I say that probably only a handful and they were absolutely delicious every time whether they were big broad or smoke they're not extinct or endangered either by the way folks they're not they are not endangered there are a f****** trillion of them you guys are all fishing in my backyard as I sit and watch this and watch these people say oh you shouldn't do this and do that with sailfish shut the hell up and go eat a sailfish

    Had it in a restaurant on the California/Oregon border. Cooked in butter and garlic it was more like beef steak than fin fish. Very dense meaty texture, and the flavor was excellent. If you have to take one, bleeding it right away is the way to go. Thanks for the fun, you did the potatoes perfectly.

    I just found your channel and love it! I think the word you are looking for to describe the meat would be dense. This stands to reason being the fastest fish in the water. Even their movements in the water are not long sweeping strokes but very short quick ones. Awesome idea with the yogurt! Gonna have to give that a try!

      7 ft 8 in long is that from the end of the bill all the way to the tip of the tail ??? Of course so yeah you can easily make a sailfish seem or appear or come across bigger than it actually is simply by giving the overall measurement to be honest with you if you want to eat one get one that is around 50-in between fork in its jaw and for Candice Dale you want basically small body girth small muscular and compact sailfish that's what you want take you a small sailfish home but before you do bleed it and got it and take good care of it keep it iced when you get home baked smoke grill broil and you'll forever be in love with how good a sailfish can be

    I catch so many sails I don’t feel bad smoking one every once in a while. Goal is to not kill them to help out the charter business but if the fish is tail wrapped and you know it’s going to die then it’s time for the best fish dip. I normally smoke AJ but love a nice oily sail

    I'm from key west. Grew up fishing both the gulf and Atlantic side. Never heard of anyone ever eating a sailfish! Always wondered why not though! I've caught my share of sailfish but have always let them go too! Awesome vid and channel guys!

      Bad technique. The safe way is grab it with your THUMBS TOGETHER. Thumbs together is like grabbing a kayak paddle because it’s more natural to go over your shoulder instead of pulling towards your chest

      Yo Josiah that won't go over well trust me as a 14 year old with my brother and our best friend we used to wonder all over on foot around Palm Beach and the Intercoastal Waterway and catch big huge Lady Fish regularly just for fun on spoons and top Waters in the winter months in Palm Beach but I can tell you one thing smell a Lee fish the next time you catch one while it's fresh ....... give it a good smell before you try to cook in one you don't eat ladyfish there is nothing to eat including tarpon and those story if you want to go ahead and do it do it let us know how it works out for you

    Try it with just a butter, garlic and olive oil. Baste it throughout the cook. Lemon on top. Simple and delicious. Great video. Looked like a flying fish to me.

    Totally correct when you said each Sail has it's own personality. I feel like the midsize fish give a better fight than the big one's. I haven't eaten it yet but I agree you should've cut thinner pieces. I'm not a big fan of thick pieces of fish. Great job on the video. Tight Lines

    Great video. I haven't tried poke, sashimi or sushi with it but I have made it with grilled halved lemons and Italian gremalata with toasted pine nuts that came out awesome. Also, pro tip- grill with Evo and s&p at a 45°, then turn back at the opposite 45°. Perfect diamond grill marks.

      *Just a wee A bit Hard to bleed once the heart stops beating unless you cut the tail off and can hang the sail up but that might be illegal to do these days with the FL Regs in place...* ..gw

      @@ahmedaiman5258 *Yes you could gill artery cut bleed it out normally... but since the fish was tail hooked an dragged backwards the entire fight to the boat... it was already dead when it was lifted aboard the boat... in essence, the fish drowned and was oxygen starved dead... So the heart would not have pumped out the blood as in a normal gill cut bleed out... If any fish's heart is still pumping, any arterial cut (gill or tail) would allow for a proper bleed out ... Hope that made sense* ..gw

    I smoked sailfish once, doesn’t taste like a fish at all. Tasted so much like pork it kinda freaked me out.

      Marlin is pretty similar, like the juiciest and tender pork. Probably why a teriyaki glaze goes so well with it

    Fresh sailfish tastes amazing in Baja style sashimi, we add purple onions to it and soy sauce infused with serrano or habanero. add plenty of lime juice! we prepare lots of fish this way. Blue Marlin meat is almost white when you fillet it also really good to eat. Shout out from Cabo San Lucas.

      I believe they are...their govenor was leaving it up to the county's and recently was made state wide, I believe. Fishing during this time has always been allowed, however access has not. Beaches, bridges (keys), public boat launches are closed. Florida, Alabama, North Carolina and Pennsylvania. Although, PA fish commision owned launches are open. Go figure.

      Here in MS, our governor just issued “shelter in place” starting yesterday at 5pm. But most public boat ramps are still open but we can’t have more than 2 people in a boat. Hope everyone stays healthy and God Bless

    I have had sailfish once before I made it with butter, apricot jam, and garlic and lemon sauce and that was pretty good that bit of sweetness from the apricot jam just makes it for me
    That said I have never had any fish in a yogurt-based sauce and I will have to try it on my next fishing trip for sure

    Already subscribed to the second channel, looking forward to more content. I have had Sailfish, and Swordfish, and I always thought it was like a flaky pork chop. They are also some of my favorite fish to eat, because of that fact. Amazing in fish tacos, stir fries, and also in many pork recipes.

    Hey Victor. Good attempt at "roasties". My wife is English and thats the way they do them. A tip. Peel them, gives them more area to crisp. Use a thicker pan like cast and put oil or beef tallow in bottom. Preheat pan in oven to cooking temp, THEN dump in the par boiled taters. Great video!

      It stops the meat from having red or dark blood clotting that tastes foul.
      The fish he filleted had that dark meat that was ruined from not bleeding the catch immediately. It should have been cut out and fed to the sharks!

    Good video! I've been waiting for a Sailfish CCC , was curious to see if it was similar to Sowrd and Deb confirmed it.
    You did a good job cleaning that fish! I liked the way the meat looked when you were finished with it.

    You can't get good sear marks while covering the source of heat with foil.

      It’s a pellet smoker. You cover the heat deflector with foil to keep it clean and prevent flareups. It’s more of a smoker than a grill.
