I rarely cook fish because it wont behave when I try lol, so I thought ill just have a quick look for a pan fried trout recipe and this was the first one I saw and clicked on, and perfect!!! I'll swap out the herbs for fresh garlic, and a bit of lemon juice. Looking forward to making this and shoving it in my face hole lol, thanks Chris. Watched from Perth West Aust :).

An excellent technique. I’ve used it twice now with rainbow trout, in a well-cured cast iron pan. The first time, exactly as done in the vid; the second time, the same, but I didn’t have thyme so i used tarragon and added minced fresh garlic, as you suggest. I highly recommend tarragon (and garlic) for this method. It was delicious. Thanks for the informative vid.
PS I love the Maritimes - in fact my sister and her husband just moved to NS last week. Next time I’m down east i will make a point of checking out your establishment.

I like my rainbow But the last 3 years i have been fishing brook trout And getting avg 4 to 9 lbs I fillet mine with bones in Add coarse salt And brown sugar And about 6 drops of liquid smoke with foil with poked holes for 12 hours Then pull the bones (more easy less damage)
Then drain the fluids and get the pan up with butter And after i cook my fish I add Wild ramps to the pan Black pepper This gives the meal the garlic and onion taste Add in chunks of semi cooked potato from my pickling jars on to the pan ..It started 40 years ago with my father And a camp fire And 1 cast iron pan Now when i do 1800kms drives to the West coast I spend a extra day just fishing

Never been a fan of fillets when it comes to trout. Cooked correctly you should be able to pull the back tail upwards and away from the fish once finished, allowing for no bones and no waste. So so wasteful when they fillet it. Also, the Skin is the tastiest part of the trout in my opinion.
