    There’s a nugget of management excellence in this video. Not just the delicious butter, but the manager said “I’ll shape for an hour, I’ll wrap for an hour… everyone rotates roles to keep the passion high about what we do”. This is gold. Humans become dull and bored when doing the same task all day, every day. Rotating stations and breaking up the day keeps everyone passionate about the product they produce. Team before self. 👏👏

    I cant express enough not only how good this butter is, but just that its a whole other experience. Since having it, ive tried many high end butters from all over and none compare, Bordier truly is a giant step above the rest. I only wish I was able to find a place that could procure it for me here in Minnesota :(

      ROFL! its just plain butter. buy a quart of heavy cream and whip it in a mixer until it separates into butter and buttermilk. then wash the butter with water. there is no reason to overpay for foo foo frenchie label butter. they charge $14 a stick plus overnight international shipping. hard pass.

      It’s just oxidized butter with a bit of salt. Very easy to do yourself at home.

    The quality and attention to detail is without equal! My dad said that he would rather eat 1 pound of butter than a tablespoon of margerine, he laughed at the marketing of plant based "butter" and used butter daily. He lived to 96 years old. I think he was on to something! I should also mention that he was married to a woman 20 years younger than him (my Mum) .

      @@kylesear6919 → Look up Nina Teicholz on youtube. She's terrific at describing the evils of margarine as well as all "vegetable" oils. Butter and most animal fats are benign, the rest are inflammatory.

      @@wilhelmtaylor9863 When my mother was a young girl in the 1930s, it was illegal for margarine to be sold in any color other than white. This was during the depression when her family had to use margarine to save money. The margarine block would come with a package of yellow dye and it was her job to laboriously mix the yellow dye into the raw, softened margarine to make it look more appetizing, like real butter.

      Butter is something special in France. We use it quiet a loot for cooking or even just breakfast
      . A real croissant for instance is mainly done with butter.
      I personally have one of my favorite breakfast to eat a fresh baguette just with some good butter and a coffee. Simple but terrific

      If you just put milk in a container and then leave it alone while you travel by horse or carriage on a bumpy road, you'll accidentally have butter after an hour or two. Once people figured out you could do that on purpose it was just a matter of refining the technique.

      @@JN-wr9he Butter doesn't carry germs or bacteria well due to it being salty and basically already a preserved food, no risk of them getting anyone sick. All professional restaurants don't use gloves unless they're doing something greasy / slimy and actually need to wear them to keep their hands free of grease or slime. Hands can be washed. If you're wearing gloves you don't wash them that often and a tiny hole can be made in the gloves that contaminates everything.
      On top of that it's harder to feel through gloves when doing precision work. A well-washed hand with no gloves is much more trustworthy than a gloved one.

    I buy this butter at the shop in Saint Malo when I go there every few months. The restaurant next door serves the butter on a plate - 8 ( I think ) squares of butter and a big basket of bread. That's all you need really. It's delicious, the shop is amazing, they will pack up the butter in a thermal bag for traveling with ice packs.

    I just bought this butter in Korea in a high end grocery that had other french butters as well. I decided to try because I watched the retailer reduce the price but it was still very expensive (higher than the non-reduced premium french butters. It was the best butter I have ever had. Came to CZcams searching for the secret of this butter found this

      I've never seen it in a grocery store... I found it at the the high end grocery at the Hyundai department store dairy section. They have a lot of rare and imported cheese and Italian meats as well.

    Perhaps my comment will not be noticed by anyone, given how many people around the world will see this beautiful piece of technological art, but... If anyone reads this, I would like to wholeheartedly thank these people who are doing their honest work, while showing their creation for review and emphasizing the external simplicity of such a difficult technological process! Living in Russia (yes, that very distant country, which is in a difficult political and economic situation), I want to say thatpeople don't even think about it heresuch 'simple' things as the manufacture of much-needed products and their quality: people in cities buy low-quality products in ordinary stores, and it's even hard to imagine how big is the problem in my country of manufacturing fake dairy products from very poor raw materials, with violations of sanitary and other technological conditions...
    But I would not like to end on a sad note, but only with hope in a person as a creator of general well-being, honestly fulfilling his mission, whose work will be appreciated.

    I used to be apathetic about butter until I tried Bordier butter. It completely changed my opinion of butter and my appreciation for it has increased (unsalted is the way to go but Bordier's seaweed butter is still the best butter I've ever tasted).

    I started churning butter at home in a Kitchenaid. I'll never go back to industrial butter. Even doing it as an amateur, the difference is incredible.

    When he spoke about oxidation I thought why would anyone want to degrade their product, but like all finer things I guess it's just a small percentage in the process to develop more complex flavour. It's still weirdly interesting how some prefer funky flavours over clean ones (Yes Blue cheese I'm thinking of you!)😅

    I get a shipment of this butter once a year and freeze it for special occasions throughout the year. It costs an arm and a leg to get it here but there is no equal domestically. Animal Farm is the closest and it is even more expensive and even harder to get.

    As a kid, we had a Holstein cow and made our own with a hand churn.
    Bright yellow, didn't kneed it but turned out great.
    Mom made homemade bread too. The smell was heavenly.

      Gloves are a fallacy. They incite people to be lazy about hygiene. A study in the US showed that sandwiches prepared with gloves have twice the risk of being contaminated compared to those prepared with bare hands.

      There is no dirtiness difference between gloves and hands the moment you put on the first or wash the second. And often, workers with gloves tend to not change it very often.

    I am so impressed and full of admiration. These are trues craftspeople, who produce wonderful, life-enhancing and delicious butter. I am in Portugal, where cream and butter are of poor quality or non-existent. I would pay anything to have this butter available for cooking and baking, and I know it would enhance everything I do.

    I spent $40 just to get a special order of Bordier butter from my local artisanal fine foods supplier because I really wanted to try it.
    It tastes different for sure. The texture is melt-in-your-mouth and putting it on a good baguette is just simply heaven. You don't need anything else for your meal. But the flavoured ones definitely have a strong taste, especially the seaweed butter - it's plenty salty.
    I'd say it was worth a try, but not so feasible for regular consumption unless it's easily available to you. And this was half a year ago, it wasn't all that memorable until I stumbled onto this video again and decided to recall what it tastes like.

    1:16 there must be some sort of translation error here. He's saying that the 4,400 litres of cream will become 2,200 tons of butter, but earlier on the video is saying that they produce between 350 to 380 tons a year.

      1 ton = 1,000 kg. Unlikely that 4,400 litres makes 2,200 tons more like 2,200 kg or 2.2 tons. This then lines up with 380 tons a year

      @@OptimusWombat they can sometimes intermix them. Perhaps the translator and the editor were from different countries and you have the unhappy typo accident. You could see it as 4.4K milk turn into 2.2 tons of butter.

    I wonder if they get arm hair in their butter I’d still eat it don’t get me wrong the butter looks delicious but he was working that butter without sleaves. I make pizza at home and find my arm hair falling and sticking in the dough more times that I can remember. In case of pizza once under the cheese😂 it’ll be hard to detect and I’ll probably ate and not noticed but i would hate to see one on my toast

    I didn't realise M. Bordier had retired. What a great company, whilst some of the scientific claims are dubious, it doesn't actually matter, because the final result is a supposedly great product which I would love to try one day! If there is an artisanal butter, this is it!
