Actually you can punch air but only if you change your video settings so you need to go to settings and then choose video then scroll down until you found UI profile then click then choose classic

My main issue is that when I tried to join it was really crowded and I couldn’t get past the main lobby
(I was on pc)
I play on PC and you can walk through people

Wait cant you use the mobile control scheme with the attack buttons? Im about 90% sure it works
Yup it does
You can bend by tap and not removing for a second or two it works on tablet
On bedrock you can also change your look mode to have a permenant crosshair in the middle, this should work as well

They recently added a Separate Buttons + Joystick play option, so the main issue no longer exists if you put some effort into learning the controls.

If you don't have a controller (most of the people don't) you can change your controls to the new ones where you have a sword button and if you click on it, it works like punch but you actually just have to click it

tips : punch the ground because anywhere you go there will be ground except for the sky.
i gave benders mc a try, i went with a fire bender, and overall i just felt a little lost. like i spent an hour and a half running in a line till i saw someone. and i get that there are anti-greifing measures but ultimately it felt like there wasn't much to do in a world. i enjoyed how the bending worked however and found it fun hitting animals with fire blasts
On pc bedrock, you are practically unstoppable since you can spam click

im pretty sure that texture packs can add buttons to UI in bedrock edition, perhaps you could add some bending buttons with a texture pack. the main problem would be making this exclusive to mobile though.

With new touch control you can now punch in air with the buttons
There's 3 touch control 1st one have punch and place button 2nd and 3rd are touch and hold anywhere on screen to place and break block
there is also a setting To enable modern mobile controls letting u a separate button for left and right click actions.
If u have a cable controler u can use a docing station used for laptops to connect to your phone and plug the controller into the docing station
iPad tablets: You can use switch controllers!
Maybe a custom texture pack for mobile that allows to toggle bending abilities on the gui. Some other java severs have custom texture packs.
That's fundamentally not how resource packs work. You would need a mod (or possibly a plugin?) to add a custom GUI like that. Plus, I don't even know if GeyserMC has a way to load server resource packs? You could probably do it through a chest gui or maybe through chat, but both of those would be more clunky than just using the split options feature other commenters have mentioned.

You can use a keyboard and mouse on mobile as well, Bluetooth keyboard and mouse and/or wired keyboard and Bluetooth mouse and vice versa. I think a USB c keyboard to charging port should work, or USB-C to usb-c
Edit: use an adapter that has multiple ports, at least one USB-A port and one USB-C port.

You can choose a different buttons for touch screens go to settings and go to touch control or something like that and there one that makes punching a button so you can punch air

Some of the bending abilities don't work or they'll only work once after you activated it. An example of this: I've tried raise earth on dirt and it didn't work but after a while it worked
