    This recipe is for 5 servings.
    Biryani is a feast and making it perfect is all about practice, once you make it a pressure cooker, you will never go back to making it any other way. This is by far the easiest way to make a Biryani Dum style. (Biryani Marriage)
    The pressure cooker makes the whole process easier and cuts the cooking time in half while helping to preserve the flavours of what you expect in a Dum style Biryani.

    I made a mistake on the write up about the rice, instead of writing up 4 cups of rice i wrote 3 cups in the video. I apologise.########
    Tips:
    1. GOLDEN RATIO
    For rice measurement simple rule is to take equal quantity of meat and rice by weight i.e 1:1 ratio. That means 1 kg meat (chicken, lamb or beef) for 1 Kg rice.
    2. QUALITY OF RICE
    Rice is main ingredient so quality of rice is very important, use a good quality basmati rice.
    3. SEASONING
    Salt is most important taste enhancer in any food. If your rice lacks in salt, biryani will lack completely in flavour. Salt is most crucial in flavour of every food make sure you use salt in all steps; marination of meat, making gravy and frying potatoes.
    4. ADD FIRST LAYER OF UNCOOKED RICE TO ABSORB THE GRAVY MOISTURE.
    5. DO NOT SOAK THE RICE TO PREVENT OVER COOK THE RICE (SOFT RICE)
    6. DO NOT SKIP THE PART OF SOAKING MEAT, THIS CALLED TENDERIZING, SOAKING IN WATER DOES MAKE THE MEAT MORE TENDER AND REDUCE THE STRONG BEEFY FLAVOUR.

    biryani cooked in pressure cooker seems ok but serving it looks challenging as the view till down the way to the bottom of the pressure cooker is not easily accessible. so how do u do the plating then🤔? the taste is definitely not same as in a heavy 'marmite'.

    I have a question about the milk powder though. What does it do really and can I bypass it?

      You can leave it because you are going to use yoghurt anyway.
      The milk powder give a creamy texture to the base (gravy) and helps to caramelised (contains sugar) the chicken and flavour.
