1 1/2 cups white sugar
1/2 cup packed light brown sugar
4 eggs
1 1/2 cups canola oil
3 cups peeled and shredded carrots (6 medium carrots)
2 1/2 cups all purpose flour
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Raisins and walnuts, if desired
Cream Cheese Frosting:
1 1/4 cups powdered sugar
8 ounces cream cheese, softened
5 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1 tablespoon sour cream

I tried this recipe today and everyone in my family including me loved it. The only thing was i had to put it on for 30 extra minutes because the middle wasnât cooking properly. Overall i think that this was a really good carrot cake recipe and i may even try it again someday đ

Made this two days ago, after missing this great carrot cake I had at a hotel I stayed at last week. I added raisins and nuts and it was even better than the one at the hotel! it was so good, I'm making it again tonight at my cousin's house. Thanks for the recipe!!
I made this for my dadâs birthday a couple weeks back. Easy steps and turned out amazing. I managed to get my other family members who hated carrot cake, to actually crave for it. Will make it again tomorrow because now they crave for this. Amzing cake!

Tried this recipe with half cup less sugar and half cup less oil (like some of the earlier comments ) and it turned out great! Had to bake it a little longer than the 40 mins but that normal cos of different ovens The cake tasted even better after 1-2 days!

I Love this recipe, it's so good! this is the second time i make it and this time i did a lil changings... I added only 1 cup of white sugar and half cup of brown sugar, and because i didn't wanted to add a lot of oil I added only half cup canola oil with half cup apple sauce, it really came out great! for next time I'll try to do 1 cup of applesauce to completly substitude all the oil đđ

In case you're wondering, you don't have to use cream chews frosting. I ran out of cream cheese, so I made a simple buttercream instead. Just reduce the powdered sugar a bit and it tastes just fine. It didn't really change the taste all that much.

I ended up talking to my sister while cooking this recipe. I never got the chance to watch the video but I just read the ingredients in the description. And shockingly it turned out delicious. I wasnât sure how long to bake for and at what temperature. But I just guessed 350 for 40min and it was perfect lol đđ definitely will be making again

Yeah once I didn't have the time to make one for a birthday so I bought one at Walmart Bakery and it was awful, never do that again . I have always wanted to buy an ice cream cake at a reputable place, never had one.

I tried this recipe a couple of times and I'm in love. I used soft dark brown sugar instead for that delicious carrot cake look and taste. 10/10

I just made this cake and it was so good i just made a few tweaks. i decreased the sugar to one cup and the oil also to one cup, added 1/2 cup carrots more, did not add cloves or baking soda and turned out very yummy.
for frosting i didnt make cream cheese frosting and went with simple icing which was also great
i turned it after 15 minutes and left it for additional 20 minutes and that was perfect for me.
i recommend this to every one because it really is delicious and flavorful.

Listen, I made this cake, it was sooooo moist, not too heavy and delicious especially when warm. Simple, easy and delicious. I didn't use any walnuts or raisins though, also I used vegetable oil instead of canola oil, and I ran out of granulated sugar so I just used about 1 1/2 cup of brown sugar. It's important to know you should be careful with the amount of sugar you use, because this cake can be very sweet, you can use half of the amount of sugar in the recipe, but then again it depends on what you consider too sweet.
