- Over 2020 and the current #MCO, many of us found ourselves staying at home and EATING AT HOME way more than we used to. #NyonyaLaksa is definitely one of my personal favourite local #MalaysianFood and yes, even though it may seem slightly complicated to make - I assure you, it's gonna be DELICIOUS.

NYONYA LAKSA
Part 1: Laksa Paste
🌶️ 1-2 knobs of Tumeric
🌶️ 1 knob of Ginger
🌶️ 10 cloves of Garlic
🌶️ 10 Shallots
🌶️ 3-4 stalks of Lemongrass
🌶️ 2 inches of Lengkuas
🌶️ 15 Dried Chillies (soaked & de-seeded)
🌶️ 6-8 Bird's Eye Chillies
🌶️ 6 Red Chillies (de-seeded)
🌶️ 30g Belacan
Part 2: Prawn Broth
🍤 12 Prawn Heads & Shells
🍤 500ml of Water
🍤 500ml of Chicken Stock
Part 3: Laksa Gravy
🍲 3 Large tbsp of Laksa Paste
🍲 30g Dried Shrimp (Soaked & lightly chopped)
🍲 Prawn Broth
🍲 750ml Fresh Coconut Milk
🍲 Tofupok (Dehydrated tofu)
🍲 Fishballs
Assembly + Condiments
🍃 Bihun (blanched)
🍃 Bean Sprouts
🍃 Shredded Cucumber
🍃 Prawns
🍃 Fishcake
🍃 Finely sliced Daun Kesom
🍃 Finely sliced Bunga Kantan
🍃 Laksa Paste (on the side)

Sherson Lian kicked off his TV career with (and still is!) hosting ‘5 Rencah 5 Rasa’ on TV3 Malaysia, a cooking show that has been on air the past 10 years, with 24 seasons and 1500+ recipes and counting! He has also hosted multiple TV shows on the Asian Food Network (previously AFC), including "Amazing Food Challenge; Fun in the Philippines', ‘Great Dinners of The World’, 'Reality Bites' and 4 seasons of ‘Family Kitchen with Sherson’ together with his mum.
Sherson Lian is the co-founder of Makhan by Kitchen Mafia, a restaurant in Petaling Jaya, Malaysia and Kitchen Mafia, an F&B solutions company that offers catering, private dining/chef's table sessions and restaurant/menu consultancy among other services.
Gas habis, this is by far the most realistic cooking show I've ever had😄

Induction Cooker can come in handy when gas finish. Function: Boil water, boil porridge (reheat), reheat cold food dishes, boil 1 sachet green tea (big batch) 3L up, instant noodles in smallet pot, reheat sauces for noodles, boil spegethi noodles (10 minutes), make instant soup from freezer frozen soup, just add ingredients such as meat, green vegetables etc Many functions. Got many function: steamboat, stir fried, boiling, reheat sauces......
