Veg Konkani Traditional Thali | No Onion Garlic Classic Recipes| Festive series

  • Hello all,
    Authentic Konkani Veg Thali is simple yet delicious wholesome plate of food. Thali comprises of White Rice , Dali Thoy(Dal), Muga molya-kirla randayi(Sprouted Moong-Bamboo shoot Curry),Beans-batate Upkari(stir fried mix veggies),Bajo(vegetable fritters),Chana dal Payas(Jaggery Kheer)
    along with some pickle and salt served onside. usually traditional dishes served as a offering to god doesn't contain Onion and Garlic. hence it is knows as a satvik bhojan as well. There are many other dishes like kosambir, Airawat , Rosu also served in a thali for special occasion. But today I have prepared the most basic thali of simple Konkani household

    Ingredients
    Dali Thoy/Konkani Dal
    1) 2 Cup Toor Dal/Pigeon peas
    2) 3-4 Green chilies
    3) 1 Tomato chopped
    4) 1/2 Ginger grated
    5) 1/2 tsp Turmeric powder
    6) 7-8 Curry leaves
    7) 1 tsp Mustard seeds
    8) 1/4 tsp Asafoetida powder
    10) 2 tbsp Oil
    11) Coriander Leaves
    Beans-Batate Upkari(Veggie Stir fry)
    1) 250 gms Beans
    2) 1 Big Potato chopped
    3) 1 Big Carrot Chopped
    4) Salt to taste
    5) 2 Green Chili
    6) Big pinch Asafoetida
    7) 1 tsp Mustard seeds
    8) 3-4 tbsp Fresh Coconut
    9) 3 Tbsp Oil
    Muga molya-kirla randayi(Sprouted Moong-Bamboo shoot Curry)
    1) 2 Cup Green Gram Sprouts
    2) 3-4 Bamboo-shoots soaked in water for 3 days
    3) 2 Cup Fresh Coconut
    4) 2 tsp Coriander seeds
    5) 6-7 Red Chilies
    6) 1/2 Turmeric
    7) small piece of Tamarind
    8) 7-8 Curry leaves
    9) 1 tsp Mustard seeds
    10) 1/4 tsp Asafoetida powder
    11) 2 tbsp Oil
    Baje(Vegetable Fritter)
    1) 250 Cauliflower(Veggies like Potato, Raw Banana, Bread fruit, Bitter gourd, Capsicum can also be used)
    2) 1/4 cup Chick-pea flour or as required
    3) 2 tsp Red chili powder
    4) Salt to taste
    5) 1/4 tsp Asafoetida/Hing
    6) Oil for deep frying
    Paayas(Kheer)
    1) 1/2 cup Soaked White rice
    2) 1.5 Cup Jaggery
    3) 2 Cup Fresh Coconut
    4) 3-4 Green Cardamom
    5) Cashews , Dry grapes
    6) 2 tbsp Ghee
    7) Water as required
    8) 1/4 Cup soaked Chana Dal
    *Note
    1) Instead of Bamboo shoot , Raw Banana or Bread fruit or Potato can also be used in Randayi along with Sprouted green moong as a combination.
