I feel like this is covering up the taste off coot. If I take a teal, a dove and a coot, fillet a breast and only use salt and pepper. The teal and dove are delicious and the coot is mud flavor with salt n pepper. In contrary, my friends hate canada goose, but I'll put it in the crock pot until it pulls apart, smother it in bbq sauce and pulled goose sandwichs are fantastic.
