  • Every day, 66-year-old Ng Chin Chye and his wife wake up at 2am to get ready for work. By 3.30am, they arrive at Hong Lim Market & Food Centre, where their hawker stall is. Ng is the proprietor of the popular Outram Park Fried Kway Teow, and for the last two decades, he’s been dishing out plates of sweet, smoky char kway teow to customers at Chinatown’s first and most iconic hawker centre.

I tried the food when he started out almost 50 years ago in Outram Park. There was a Chancellor Departmental Store and a Chinese traditional medication store which doubles up as a courier service for parcels to Hokkien, China. I remembered there was a rojak store and a Mee Pok store operating together. His hair was well groomed and he looked handsome for a food seller.

The fish cakes are specially thin and nice 👍, the bean sprout very crunchy and kway teow mee soft and nice. Not too oily and not dry. Special indeed...

That is very true. I got the skill of cooking a dish from my mother and ended up that mine was better than hers. So my brothers and sisters and even my daugthers ask me if I can teach them acook the dish. I taught them exactly how I do athe technique with no hidden secrets nor recipe but still they can not get the taste of my dish. They claim my technique maybe of cooking but I show it to them step by step no skipping!

    每個地方抄法不同,粿條先用大火抄之後,才有鍋氣,豆芽最後加,因豆芽朝濕,对口感不適合,但有的地方,先抄豆芽,也有人喜歡的,
