Jocelyn, with respect to Mark, You Have To Take Centre Stage On Many More Videos Other Than Food. What about Mom's family travel perspective - and more walk and talk? I just found and love the series.

I'm always freakin hungry. Nice work Jocelyn! My fave: mozzarella in carrozza with a little prosciutto inside too. Tummy heaven!😂

Cacio e Pepe is my absolute favorite. Pecorino is what makes it. It’s so simple but so good.

These are some of the common dishes in Roma, but there are many others. Also, these look like versions you find at tourist restaurants.

Names of restaurants to visit and try these? I've been to Rome but some of the Instagram places that were recommended were definitely tourist traps or too crowded to visit.

If you’re sensitive to cheese you need to tell your server so they can tell the chef/cook so they can use other seasonings like paprika or another mild spice instead of cheese to prepare your dish. It will taste the same but different, especially if you’re someone who likes to try new things. I have a friend who is sensitive to cheese and can’t tolerate the taste of a single small bite. She also has chronic bowel complaints and a mood disorder that cheese badly exacerbates. What she did was have a card printed with all of her specific dietary needs which she presents to the server who can give it to the kitchen staff so they can make the necessary alterations according to her guidelines. We eat Italian a lot and her food sometimes tastes even better than mine. If she orders a cheeseburger or nachos the change is often not so difficult as one might imagine. But she does a lot of the work ahead of time to find the right solution.

Hi, I like your video and the way you are presenting all these info. I respect your opinion about the supply being better than arancini, but I wonder where you tried them, since the classic Arancini are very rich with both ragu(bolognese sauce with a lot of tomato sauce) and cheese inside. If you try them in Sicily I would not be surprised if you reconsider your opinion😊

I should know better than to watch food videos before eating. But I haven't learned that lesson yet.

My problem with Italian food (and in USA btw): Too much cheese.

Great, I'm going to starve in Italy 😞 This all sounds so gross!!! Cheese made with sheep's milk, and meat that's pork jowl or cheeks? People eat this stuff? Give me American Italian any day! How can the water be safe and clean if it's coming from fountains that everyone has probably put their dirty hands all over the spout?
