I'm Trini and had Haitian food for the first time at an event I went to last weekend and have been OBSESSED. I cleared my whole plate and started looking up recipes as soon as I was done and stumbled across your page. It's given me so much good info. So far I've made pickliz, haitian fried chicken + green seasoning. Want to make the macaroni au gratin but used up my peppers so I'll save that for next time

Haitians never measure the rice or the water. You removed the extra liquid but how did you know how much to remove? Also you say two cups of water for one cup of rice but what about the liquid that's already there from the coconut milk and bean juice?

Lol
