    Frijoles charros recipe
    Servings: 8-10
    Cook the beans
    1 lb pinto beans
    1/2 medium white onion
    6 garlic cloves, peeled
    12 cups of water
    2 tsp of kosher salt
    Bean paste
    1 cup of the cooked beans
    1 cup of the bean broth
    1/2 cup water (to get the last of the paste from blender)
    Meat prep
    6 oz ham (5 slices)
    5 bacon strips
    4 beef franks
    12 oz pork or beef chorizo
    Vegetable prep
    3 garlic cloves, minced
    10 oz roma tomatoes, diced
    1/2 medium white onion
    1 serrano or jalapeño pepper (optional)
    1/2 bunch of cilantro

    Stopped in San Antonio once, went to a Mexican restaurant, ordered 2 carne asada tacos w/ beans, rice, she said we don't have carne asada, we have brisket tacos, being from California, I asked what's brisket ? I said that's fine, she then said, we don't have refried beans, we have, charros, I said what's that ? I said ok, I then asked for tapitio, she said what's that ? She said we have chelulu, ok, it was different, but delicious, since then I make (charros) probably 4/5 times a year, so next time, I'll use your recipe, enjoyed your show, thanks.

      Lmfao you just went to the wrong restaurant. There’s definitely carne Asada in most authentic Mexican restaurants. Born and raised in San Antonio.

    Looking good! I usually rehydrate an ancho while the beans are cooking and puree with the 1 cup beans. Will definitely try this one out!

    I made this recipe the other day. My wife had herself convinced that she would hate it because of the chorizo, but I got her to try it. She loved it! (So did I.) I have had leftovers from the meal several times and it still tastes great!

    I made this soup and it was awesome I did use a few substitutions dried cilantro and canned tomatoes only had diced green Chiles in can on hand and a purple onion in the meat and it still came out great

    I grew up in New Mexico so I'm a big chili person I love red chili and posole enchiladas turning out of other I can make all of that and I love beans pinto beans love them so I look forward to making this because it's going to be so perfect in the winter months that nice kick from the chili pepper and the chorizo will give that nice warm bean soup effect love it I can't wait to try this thanks for sharing

    Do you ever put in a beer while the beans are cooking? I had charra beans in a restaurant that were so good, and the lady told me she cooked them with beer. All the meats in that pot look so delicious!!!

    Wonderful. I just made it and it came out great. One modification.... I notice all the Mexicans put hot dogs in this recipe. The problem is that... hot dogs are no longer what they used to be. The companies have (over time) started to remove the pork... then, after going to beef... they went to turkey/beef... now they've gone to turkey/chicken. Come on... do they think we are not watching? they charge the same for a pack of hot dogs but we get this flavorless inferior poultry product.
    Instead, I got the Hillshire farms smoked sausage (it has real pork in it) and I believe the dish was much better because of this.

    Thanks for sharing this recipe. There is a Mexican restaurant not too far from where I live (Charlotte, N. C.) that serves that. It is the best beans I have ever tasted. I have always wondered about the recipe.

    I’m trying out your recipe now. It’s still simmering and it smells great. I made a bunch of dirty dishes to make it LOL because I took an extra step to ensure the excess grease was removed. I poured the meat mixture through a metal stainer before adding the beans. At first glance in the pot it didn’t look like much but I ended up with a quarter cup of excess grease.

    Interesting, your Chorizo looks like the Italian Nduja.
    But the Chorizo I can get here is quite firm, like any air dried sausage.
    Anyway, I will for sure try this out and do it with the meat I can find around here.
