    Is it just a way around the Shopify costs? Not sure why someone would do this and not use Shopify themes unless it is an approach for a more custom store.

      It's not a way around Shopify costs as far as I can tell and I'm in the same boat. No idea why you just wouldn't use Shopify. If you're going through all this effort you may as well just put in a bit more effort to develop your own solution or use Shopify.

      Speed is such a low factor that it essentially doesn't matter unless your bounce rate is high. Indirectly this can have an effect but all the articles out there talking about speed and how it hurts your SEO is pretty close to bs. They are just regurgitating everything else they are reading. Yes, it is a ranking factor but it is weighted so incredibly low among all other things that essentially as long as your site loads like most modern sites do, you will be fine. If your site is so slow you have people leaving it is more so the bounce rate affecting you and not the speed itself. A lot of very high ranking stores are also rated very slow if you run a test on their sites. For example running a speed test on eBay they have a score of 53 out of 100. Amazon is 44 out of 100. Homedepot has a 28. These are absolutely terrible scores but their sites load fast enough to where the user will really not even notice. These stores are ranking for other factors regardless of speed. Sure lazy load your images and do what you can to make it faster but there are much more important things in ranking that take the majority of the weight when factoring your rank that speed really does not matter unless your site is a hot mess. If you have two crappy sites duking it out and they have the same keywords, same h1 tags, same authority score, and then 1 is slower than the other, then yes maybe that store that is faster might show up higher than the other. But then you add 1 point to the authority score and it doesn't even matter; the site with the higher authority score will beat the faster site out no matter how fast you make that other site.
