About 20 choux:

Milk 95 gr
Water 162 gr
Salt 5 gr
Sugar 10 gr
Butter 115 gr
Eggs 185 gr
Flour 140 gr

In a saucepan, bring milk, water, butter, salt and sugar to a boil.
Add the flour to the mixer fitted with the paddle attachment. Turn on to low speed. Once the liquid comes to a boil, introduce gently into the flour mixture and mix well.
Return the batter to the saucepan and place over low heat. Stirring constantly, whisk the dough for about 30 seconds or a minute and return it back to the mixer.
When the mixture has cooled to 50 degrees, start adding the eggs in batches. Drop onto a baking tray and cover with a craquelin.

Craquelin

Ingredients:

Butter 100 gr
Sugar 100 gr
Flour 100 gr
⠀
Mix all the ingredients until homogeneous.
Roll out very thinly between two sheets of baking paper.
Freeze and cut out the desired shape.
Place on the choux pastry before sending it to the oven.
It can also be colored.

Bake the choux at 175C for ~25-27 min

Filling

Ingredients:

Coconut cream 150 gr
Yolks 4 pcs
Cornstarch 8 gr
Sugar 70 gr
Whipped cream 90 gr
White chocolate 50 gr

Bring the coconut cream to a boil.
Mix the yolks with the sugar and cornstarch.
Whisk in the hot cream.
Return the mixture to the heat and boil to 80C.
Add the chocolate and mix well.
Add the whipped cream.

Fill the Choux and enjoy!
