  • Hazelnut chocolate cupcakes!

    Egg yolks 70 gr (~5 pcs)
    Salt 2 gr
    Sugar 60 gr
    Hazelnut flour 40 gr
    Flour 20 gr
    Cocoa 10 gr
    Cornstarch 5 gr
    Baking powder 4 gr
    Warm milk 30 gr
    Vegetable oil 20 gr

    Beat the yolks into a fluffy mass with sugar and salt.
    Add the milk and oil and gently add all the dry ingredients.
    Bake in preheated oven for 17 minutes, 170C.

    Chocolate ganache:

    Milk chocolate 120 gr
    Cream 33% 45 gr

    Heat the cream.
    Combine with the chocolate and mix well.

    Cream with mascarpone:

    Cream 33% 100 gr
    Powdered sugar 100 gr
    Mascarpone 220 gr

    Mix all ingredients and whisk until sturdy peaks.
