Beginner-Friendly Honey Cake Recipe | Medovik | Russian Honey Cake

A year ago I promised my followers that I'll promise my honey cake recipe once I reach 1k followers here on CZcams! So here I am sharing my recipe with you. Hope you going to like it!!

For a small 6” cake you need:
Cake Layers:
eggs - 100 gr (2 pcs)
honey - 100 gr
Butter - 100 gr
Sugar - 150 gr
Baking soda - 5 gr
All purpose flour - 350-400 gr
Frosting:
Sour cream - 300 gr
Double cream - 300 gr
Icing sugar/honey - 100 gr
A pinch of salt
Method:
In a saucepan mix together eggs, butter, sugar and honey. Bring the mixture to 85°C but do not let it start boiling. Once all ingredients are incorporated add baking soda and give the mixture a good mix. Add the mixture to the flour and start folding the dough. Once the dough comes to room temperature, you can start rolling out the cakes! Bake them at 180°C for 3 to 5 minutes. You can start assembling the layers once cakes are cooled down. To make frosting, simply whip soured cream, double cream and icing sugar together until it reaches soft peaks. Voila ♥️
Some tips:
- don’t be afraid If the dough seems to be too sticky at the beginning, keep mixing and folding and the dough will get easier to work with;
- poke cake layers with a fork before baking, it will help the layers to rise evenly;
- If you’d like to cover honey cake with buttercream, you will need to let it chill for 4-8 hours in the fridge before starting decorating.

Hi Katie! Thanks so much for your recipe~ today I gave it a go to make this wonderful cake! I was so impatient to try it that after 5 hours in the fridge I sneaked a little taste haha 😄 It was so delicious!! But quite dry... and the white frosting layer between the cakes was disappeared... should I have waited longer, put extra thick layers with the cream, or roll out thinner cakes to ensure the dessert is moist?

You’re welcome 🥰🥰🥰 try to baking the layers at a lower temperature so they won’t dry out too much and add a little bit more frosting in between the layers ☺️ hope that helps!
