  • For years, there has been one kind of deli meat that has held a special place in the hearts of children, broke college students, and more - the old reliable slice of bologna. Who hasn’t experienced a traditional bologna sandwich with two slices of white bread, mayo, and perhaps a slice of cheese food product? If you’re from the south, you may even consider fried bologna to be a delicacy, but what exactly is bologna? Where does it come from? How does it get made, and are we still going to want to eat it if we find out? Well, like it or not, we will finally reveal the truth about bologna in this video.

Going to college back in the early 80’s there was this small local restaurant/bar that served fried bologna sandwiches with the bologna cut approximately 1” thick, then coated with Texas Pete hot sauce that had been reducing in a pan until it was a thick paste. The toppings were sliced fresh tomatoes, sliced onions. lettuce, mustard, dill pickles piled high on a large hamburger bun.

WOW, everything you wanted to know about bologna! Very informative and interesting, especially for a sixty-something guy like me, whose Mom often sent me off to grade school with a brown bag lunch consisting of a baloney sandwich (one slice on white bread with mayo and mustard), a bag of chips or Fritos and an orange or an apple. This was in the 1960s, so no classroom fridges and no AC in the entire school (the school was built in the early 1900s). I paid the price one hot September day when, about two hours after eating my baloney sandwich, I was overcome with waves of nausea. I ran out of the classroom in an attempt to reach the boys' room in the basement of the school, but, despite my attempt to hold it in, I violently projectile vomited all over the walls and steps leading to the basement. I spent the next 5 days in bed with what amounted to dysentery and a high fever. The only time in my life I had food poisoning (likely due to the mayo spoiling in the heat of the classroom). Haven't eaten a baloney sandwich since. Maybe I'll try one of the "fancy" baloney dishes featured in this video.

Favorite way is to go to the meat market and order it thick sliced, like quarter pound slices, and then coating that in a smashed pretzel and grated Parmesan cheese mix (flour egg flour method but replace second flour with the pretzel and cheese mix) and pan frying it, topping with American cheese after the first flip. Serve that on toasted bread or a toasted bun, with a little mayo and mustard.
And yes, I can hear all your hearts palpitating from here. I only do this a couple times a year

But, once in a while my mother would fix what we liked and a little something else for him. I still love anything creamed, mashed and scalloped potatoes, macaroni and cheese, and pork fixed any way. I am old and still drink milk with every meal. But we had bologna!

I must say , that I grew up eating bologna as well as Spam and hotdogs. My favorite part of eating the bologna was eating the meat off of the red casing, because it made my bologna sandwich ( last ) longer. I still have a special place in my heart ❤️ for this delicious charcuterie especially if it is barbecued and served on a brioche bun. However, I get tickled when I hear people say that they ( hate bologna) , but will ( eat ) a hotdog 🌭. Now mind you, I’m not talking about (a sausage) , I’m talking about ( a hotdog ). That is very amusing indeed.
