Dry packing
These are good with oil and salt and air fryer for a few min. 5 to 7 in my air fryer. Do canners say 3” of water ? You used 1”. Your weight isn’t moving
I don’t do the jiggle method. I am in Florida My weight is a15 lb weight and when I use a 10 I’m never seems to be right so I use the 15 weight and watch the gauge. Just what I ended up doing and when I tried to switch my older ways keep me doing it with the 15. Creatures of habit.

The pots don’t turn brown sitting out ? The end color is nicer than mine was but I used water
Not with the dry packing. Of course I rinse them numerous times before canning to get the startch out. The cutting and soaking in cold water is really the key to keep the color and all in the potato as well as no cloudiness in the water. The texture of them when I canned potatoes in water more and then dry canning is so much better.
You said butter did you put some in jar?
I melted the butter with the seasoning then toss coated the potatoes in that before I put them in the jar.

Please check Rose Red Homestead. She “scientifically “ instructs why dry canning is unsafe. There was a 100* difference in the center of the jar with pressure canning vs. dry canning.
