Camille Guaty: Cuban Empanadas and Coquito
Empanadas
Ingredients
11/2- lb of Ground Beef
1- Medium onion (Dice Small)
1/4 -Green Bell Pepper (Dice Small)
1/4 -Red Bell Pepper ( Dice Small)
1/4 -Orange or Yellow Bell Pepper ( Dice Small)
4 -Cloves of Garlic (Dice Small) or Garlic Powder)
1 -8oz Tomato Sauce
1/4 -Cup Cooking Wine
1/2 -Tsp Cumin
1/2 - Tsp oregano
2 -Dry Bay Leaves
Green olive (To taste)
Caper (to taste)
Raisin (to taste)
Cilantro (to taste)
3 -Tbsp Olive Oil
Salt and Pepper to taste
Phyllo dough or Puff pastry
1.In a large pan heat oil. Add onion, pepper, and garlic. Sauté until soft, add tomato sauce, sauté for a couple of minutes and start adding the ground beef. Make sure the beef does not have lumps. Mix well and start adding the olives, cumin, oregano, pepper, salt, capers, and cooking wine, crunch the bay leaves. Add a touch of cilantro and raisin. If you need more liquid add a little of beef broth, and cook in low heat until done.
2.After finishing the picadillo, use a colander to drain the sauce. Cut phyllo dough with pizza cutter in round sections. Put drained picadillo in the center and fold pressing just the edges with a fork to seal. Preheat oven to 350F.
3.Once you place the empanadas on the baking sheet, beat an egg with a drop of water and brush the top of the dough.Bake for 15-20 minutes according to how hot your oven cooks.
Take out of the oven when golden brown on top and around the edges. Enjoy!
Coquito
Ingredients
2 cans (12 oz. each) evaporated milk
1 can (15 oz.) cream of coconut
1 can (13.5 oz.) coconut milk
½ cup sweetened condensed milk
½ white rum (optional)
1 tsp. Vanilla extract
½ tsp. Ground cinnamon, plus more for garnish, if desired
Cinnamon sticks (for garnish)
Instructions
1.Mix all ingredients, besides the cinnamon sticks, together in a blender until fully incorporated. Pour into a glass with ice and garnish with ground cinnamon and cinnamon sticks. Enjoy!

Such an underrated Disney Channel Original Movie, I honestly hope we get more DCOMs like gotta kick it up in the future.
We also need more dcoms that go deeper and have more emotional stories like Tru Confessions for example.
Yeah, I think Disney Channel needs to stop with the Musicals. I mean HSM and Camp Rock were great, and Teen Beach Movie and Descendants were good, but Zombies?! Who the heck came up with that? I want to see more dramatic DCOMs.

Gotta Kick It Up was SOOO important for me. It made me a proud little latina girl. We didn’t have a lot of representation on Disney channel so, when this came out I had my parents record it on a VHS tape so I could watch it every day ❤️

OMG IT’S HER 😱😱😱. When I first heard of the movie I mispronounced it twice. First time was Gotta tick it up. Second time was Gotta pick it up. Then finally I was corrected in 3rd grade. I rewatched this movie last June during the pandemic.

So I’m not a huge fan of this new format. There seems to be more cooking and less talk about the project that we know them from. I LOVED Gotta Kick It Up but they didn’t talk much about it. I miss the old format
I loved the cooking session too, Camille's personality really shined there. But I care more to hear about her experiences in her career then and now! So longer videos oooor focus more on the guests' projects. Thanks!
Personally, I don't like super interview heavy segments, because these actors/actresses are actual people beyond their roles.
I like seeing who they are, not their character, and it's nice to see them exist without having to talk about their work 24/7.
