- Toasted Marshmallow Ice Cream Recipe - Glen And Friends Cooking
This is a simple home made ice cream recipe that tastes just like the toasted campfire marshmallows! This silky smooth creamy ice cream uses a few simple ingredients to give you the best tasting home made ice cream ever! Add some chocolate chips and graham crackers and you've got s'mores ice cream, just like summer camp.
Ingredients:
500 mL (2 cups) 35% whipping cream
250 mL (1 cup) 3.25% milk
30 mL (2 Tbsp) dry milk powder
30 mL (2 Tbsp) Invert sugar (like corn syrup)
750 mL (3 cups) mini marshmallows
125 mL (1/2 cup) sugar
5 egg yolks
10 mL (2 tsp) pure vanilla extract - Optional
Method:
In a medium saucepan whisk together the cream, milk, dry milk powder, and corn syrup.
Bring it just to a simmer, stir, and then remove from the heat.
On baking sheet; toast, or blacken the marshmallows… in the oven or with a torch.
In a medium bowl, whisk together the yolks and the sugar.
Whisking constantly, temper the egg yolks with some of the hot cream.
Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 170ºF.
Remove custard from the heat, and whisk in the vanilla (if using).
Cool quickly with a bain marie or ice bath.
Cover and refrigerate until cold.

"Just keep moving around and then stop when you've reached where you want to be" is a great motto for life, actually.
But never lose your curiosity :)
Sometimes I think I've gone to heaven watching this channel.
You probably meant that as a figure of speech but sometimes I do actually get a really surreal feeling from these videos
More like hell, its torture seeing all that amazing food and not being able to try it.
@@Jason-ko2tb I was just about to make this very comment... I guess I am late to the party.
3 things, 1st... I love that you lick the spoon...keeping it real..2nd burnt marshmallows, yes!! 3rd, Admitting you could shovel that ice cream in.. too funny
Julie could hardly talk so I'm thinking she loved it.
She looked like she was totally debating stealing Glen's bowl when she first joined him, haha
The burnt marshmallow bits makes it look like vanilla bean. Looks delicious. 😋
This ice cream smashed between two biscuits and coated in chocolate would be divine
I can still remember the day I realised we we're the friends of Glen and friends
"I took a torch and burned the marshmallows." So much for subtle cuisine arts. But, damn, it looks good. Another great video. Thanks Glen.
Anytime I've tried to toast marshmallows with a torch, they always taste like the torch fuel.
I remember having Toasted Marshmallow Ice Cream once, years ago at a restaurant in Prince Edward County.
The flavour was so good, my husband said, 'You can even taste the burnt stick!'. I have an ice cream maker and will be trying this recipe for sure.
Next pandemic, can I do my time with you guys? I will earn my keep by doing all the dishes
I feel like this icecream would make a great root beer float.
This looks AAAAHHHHMazing! Honestly, I do not know how one can actually, fully appreciate a toasted marshmallow unless it is burnt with fire.
So right before you put it in the freezer, add gram cracker crumbs and Mimi chocolate chips so you get S’mores ice cream. Fantastic job.
hi glen, you might be interested in making brown bread ice-cream. It's popular in west Ireland. It's made with caramelised brown bread crumbs. It's so good
oh, yum, sounds delish
Lol love seeing you guys giddy with joy at how good it was.
I actually like this format. Usually, when Jules comes in, Glen starts explaining what the recipe is. This time, Jules starts eating without Glen explaining and she tried to figure out what flavors she's tasting. Unless Glen told her ahead of time, but that would be a great way to see if your recipe works.
I hear you Glen. I too am "that person."
im that person too. i love ice cream and yet im lactose intolerant. im willing to suffer for a few minutes of heaven.
@@olalat I hear you. I, too, would risk it for ice cream with marshmallows that toasted!
I made lactose-free mint chocolate chip ice cream, using lactose-free whole milk to make a custard and melting Andes mints into it before cooling. It was fantastic, silky smooth.
It did come out an odd grey-yellow, so I tinted it green - it was for my grandson, you don’t want to give an 8yo with a sensitive stomach yellow-grey anything...
edited for grammar
I love where this is going. Wouldn’t mind this being an experimental series over the summer!
Graham cracker crust, this ice cream and a chocolate ganache would be absolutely amazing.
Glen since you are doing another ice cream series this summer you should try the dulce de leche style ice cream that Claire Saffitz from Bon Appetit made for the recent choco taco episode. It was made with goats milk instead of regular cows milk, everyone in the test kitchen loved it!
The one made with goat milk it's made in Mexico and the only place you can find it is in........ Mexico , the rest of Latin america prefers Dulce de Leche made with cow milk
Made this a few weeks back - one of the BEST ice creams I've ever made. Absolutely Phenomenal. Come to think if it, I think there's enough left-over marshmallows to make a second batch . . . .
This is an outstanding recipe - i've made it five times since I got my machine. If you make it, I found that if you only add 3/4 of the marshmallows to the base and add the rest after the ice cream is finished you get these nice streaks of marshmallow that taste and look great. Also, cut the marshmallows into smaller pieces prior to toasting them and take the time to toast them as much as possible, you shouldn't see any white untoasted areas. Doing this really increased the flavor in the finished ice cream.
Amazing ice cream. The S'mores ice cream sandwiches were a big hit.
I finally got around to making this. It surpassed your animated description! As an experiment, I mixed in a few mini chocolate chips and a handful of golden grams cereal to half of the batch.. Fantastic recipe, thank you!
The thought of putting toasted (blackened?) marshmallow ice cream in my mouth simply makes me smile!
Sounds fantastic. Black pepper ice cream too.
Two of my favourite things about this channel (besides the food)
1. Glen unashamedly licking the spoon once a custard/batter has been transferred from its mixing bowl.
2. The huge smile that spreads over Julie’s face whenever she tastes something sweet.
I might try mixing in chopped milk chocolate bars and graham crackers to make S'mores ice cream.
You should pour tempered chocolate into the ice cream maker while it was turning, and fold crumbles of graham crackers after it was done churning into the "soft serve" texture. You'll get nice crispy flakes and shards of chocolate and your graham won't get as soggy.
Thanks for the tip about the powdered milk! A friend of mine also adds powdered heavy cream, which is surprisingly not too expensive. Whenever I make homemade ice cream, I also invest in a bit of dry ice, which I crush up and pack around the churn canister, which helps keep large ice crystals from forming. Cheers!
I swear Glen is just messing with us by switching shirts all the time
Glen is the Bob Ross of cooking
Best comment.
All this ice cream content looks so good. Great stuff for summer.
Made this today. Was a big hit. Very creamy. Thanks. Now I will use your base to create other flavors.
Thanks.
Title “toasted marshmallow ice cream”
Glen: “today we are going to be making a burned marshmallow ice cream”
@@jdmiller6761 toasting is about maillard and caramelisation reactions while burnt or charred refers to pyrolysis and degradation reactions
Best and easiest recipe ever!
I remember Tastee-Freez used to have marshmallow flavouring for milkshakes, but it never tasted marshmallowy.....THIS is perfect! I could tell by how your eyes glazed over when you tasted it! Thanks for this!!!!
Yo, what if you added fudge swirl and teddy grahams to make a smores ice cream?
My thought exactly! Or drizzle the scoops with chocolate syrup and mix in or sprinkle graham cracker crumbs on top.
Check out BA-test-kitchens Gourmet makes Ben and Jerrys. You could probably grab some ideas/techniques from that and combine with this!
Thak you so much for this video! I had a cone of a flavour called Campfire Cream at a little shop in Bloomfield about 16 years ago, and have dreamed about it ever since. I could never make one that tasted the same (I should have thought just to melt the marshmallows into the custard!)
Thanks!
Wow, that looks amazing!!! Will definitely have to try this one!
This looks amazing! Gonna have to try this!
This looks delicious!
Oh boy! This one looks just incredible! I could definitely see adding some chocolate chunks and topping it with graham base.
This looks so amazing
I made this ice cream and added it to a Graham wafer crust and then topped it with a chocolate layer. Turned out great.
Ooooh yum! I’m making this tomorrow!!!!
So. We’re on lockdown and cannot spread out the calories and you are advising us to make something that is irresistible? And you seem so nice. 😃
Yup... gonna have to do that one
Omg i need to make this, add chocolate chunks inside and top it with crushed graham crackers
That looks delicious!
Ive tried this now. Also added chocolate sauce and graham crackers dust on top to make it a smores dish 👍🏻👍🏻
I’m lucky enough to have the same ice cream maker. This will be the next recipe I try after We finish my peanut butter. Love the channel
I can't wait to make this ice cream!
I have to try this out!!❤
Looks sooooo good!!!
Looks wonderful and sounds with all the mmmmmmmmms delicious 😋
Glen!!! I love this recipe. The ice cream is so unctuous and silky smooth. I also made double vanilla (bean and extract) which was delicious. You made me dig out my ancient (made in Canada) Donvier ice cream machine. Tomorrow I will make watermelon ice cream, I plan to reduce milk, increase skim milk powder and maybe cream to compensate for watery watermelon mush. Then fresh strawberry ice cream and later this summer fresh blueberry ice cream.
i recently got an icecream making attachement for my stand mixer and im soooo excited to start trying new recipes!! this came to my timeline at a perfect time!! :P
It's getting really hot in Los Angeles and it been really craving ice cream!! I need to get an ice cream maker... They are one of those gadgets that are hard to DIY (the bag and the coffee tin trick is a lot of work!)
You know you've made something good when you laugh after eating it
One of my favorite flavorings from Toroni is the Toasted Marshmallow, it is fabulous. I use it to flavor Cool Whip for pies, puddings, also in oatmeal, and of course my addiction ice coffee. Oh lets not forget I will add a splash to a bowl of ice cream or when making a milkshake/malt.
Happy Thursday from Kirkland, Wash. Wow, thanks for all of your hard work doing these videos! As a Girl Scout (back in the day), I too always put my marshmallow into the fire...I will definitely be making this as soon as I find an ice cream maker! Thanks again! Stay safe 👍
Great recipe!
Thank you for not telling her what the flavor was, I wanted to see if she could guess what it was 😊👍
This sounds really good! I'd love to see what you come up with for a matcha green tea ice cream.
OH I AM SOOOOO TRYING THIS!!!
This looks delicious! I need to figure out how to make an egg-free version.
Replace the fructose with honey and add dark chocolate chips at the end and you get S'more ice cream!! Can't wait to try it out. Thanks!
Looks so yummy
I love watching your channel, truly enjoyable and wonderful understated humor :-) You two are the best!
Sounded like a challenge Glen to make nutritional vegetable ice cream hmmm? Love these channel
how about some graham cracker with chocolate syrup with this ice cream?
I was just thinking that. Graham cracker chucks, and maybe a chocolate swirl.
Genius
You are incredibly fantastic 👌🤩
Thank you so much for your so nice show !
Looks delicious! Roasted marshmallow from Greg's Ice Cream in Toronto is my favorite.
Omg yes!!!!
I want to try this soooooo bad.
I just could not go the pepper ice cream, but this is sitting around a summer campfire in a bowl. Thanks!
Far and away the best ice cream I've made at home and the new family favorite. Thank you for a great recipe. Any plans for buttermilk ice cream in the future?
delicious :)
YUMMM....
One cool idea I saw somewhere that the black pepper ice cream reminded me of is ghost pepper ice cream. Might be an interesting flavour
Not going to be able to get to Slickers Ice Cream in Bloomfield this summer. I’m going to have to try this out to see how it compares to their Campfire Cream flavour. It’s my all time favourite flavour!
Yup they have to have been on fire before I eat them oh my goodness soooo yummy!
This strikes me as an ice-cream that would benefit from some dark rum.
👍👍👍
This is in the fridge chilling down. Can’t wait! Thanks for the recipe. We made the black pepper last week and loved it! (One note - the Method in the description doesn’t describe the step of adding the toasted marshmallows)
Going for the second batch today!
I dont know if you know how much your content is helping people in this time. But you need to know this. No pressure. #cookingbobross
There's a local ice cream maker in my area in the UK called Hocking's and its literally the best, most smooth ice cream ever. They put butter AND clotted cream in it 🤣🤷♂️ based in Appledore in North Devon.
I wonder how other ice creams would taste if you just melted in un-toasted marshmallows into the milk mixture to give it that wonderful looking texture.
Wow, I can only imagine. 😋😋 now make s’mores ice cream sandwiches 🥪
The Ice cream looks so delicious 😋. Would it be okay to take maybe 1/3 of the marshmallows and save them to put in the ice cream after the ice cream machine? That way you have chunks of roasted marshmallows
I wish I had an ice cream maker because I'd make this ASAP!!
Could agave syrup be used for the sweetener?
Glen looked like his taste buds were in heaven 👍😁
YUMMMMMMMMMMMMMMMMM.!
I am new to your videos and loving them. I was wondering if you have a cookbook.
Download or a hard copy would fantastic so I could try some of you past recipes.!
You know what would go great with this? Graham crackers and chocolate bars!
You should do a crème brûlée ice cream. I once made a crema catalana( Catalan version od crème brûlée, flavored with cinamon and lemon zest instead of vanilla) ice cream and it was amazing.
Tried this for a funky Thanksgiving this week-end. Note to myself... Do not use old marshmallows.🙄😅 They do not melt! Oups! It's messy but oh! So good! Thanks for the recipe!
@Glen if you do a Q&A show, I'd love to get your thoughts comparing: frozen custard recipes (egg yolks) vs. the ones with condensed milk (and egg whites). ...and which ones would you add an invert sugar, like corn syrup or gum(?) syrup? THX for a great channel!👍
Looking forward to making this. New ice cream maker arrives today. Could I use same base for coffee ice cream? Planning on using espresso powder and cocoa powder.
Just remembered a ice cream that I've heard of wondered if you've heard of or made matcha green tea ice cream.
Yummy
