  • Toasted Marshmallow Ice Cream Recipe - Glen And Friends Cooking
    This is a simple home made ice cream recipe that tastes just like the toasted campfire marshmallows! This silky smooth creamy ice cream uses a few simple ingredients to give you the best tasting home made ice cream ever! Add some chocolate chips and graham crackers and you've got s'mores ice cream, just like summer camp.
    Ingredients:
    500 mL (2 cups) 35% whipping cream
    250 mL (1 cup) 3.25% milk
    30 mL (2 Tbsp) dry milk powder
    30 mL (2 Tbsp) Invert sugar (like corn syrup)
    750 mL (3 cups) mini marshmallows
    125 mL (1/2 cup) sugar
    5 egg yolks
    10 mL (2 tsp) pure vanilla extract - Optional
    Method:
    In a medium saucepan whisk together the cream, milk, dry milk powder, and corn syrup.
    Bring it just to a simmer, stir, and then remove from the heat.
    On baking sheet; toast, or blacken the marshmallows… in the oven or with a torch.
    In a medium bowl, whisk together the yolks and the sugar.
    Whisking constantly, temper the egg yolks with some of the hot cream.
    Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 170ºF.
    Remove custard from the heat, and whisk in the vanilla (if using).
    Cool quickly with a bain marie or ice bath.
    Cover and refrigerate until cold.

    I remember having Toasted Marshmallow Ice Cream once, years ago at a restaurant in Prince Edward County.
    The flavour was so good, my husband said, 'You can even taste the burnt stick!'. I have an ice cream maker and will be trying this recipe for sure.

    I actually like this format. Usually, when Jules comes in, Glen starts explaining what the recipe is. This time, Jules starts eating without Glen explaining and she tried to figure out what flavors she's tasting. Unless Glen told her ahead of time, but that would be a great way to see if your recipe works.

      I made lactose-free mint chocolate chip ice cream, using lactose-free whole milk to make a custard and melting Andes mints into it before cooling. It was fantastic, silky smooth.
      It did come out an odd grey-yellow, so I tinted it green - it was for my grandson, you don’t want to give an 8yo with a sensitive stomach yellow-grey anything...

    Glen since you are doing another ice cream series this summer you should try the dulce de leche style ice cream that Claire Saffitz from Bon Appetit made for the recent choco taco episode. It was made with goats milk instead of regular cows milk, everyone in the test kitchen loved it!

      The one made with goat milk it's made in Mexico and the only place you can find it is in........ Mexico , the rest of Latin america prefers Dulce de Leche made with cow milk

    This is an outstanding recipe - i've made it five times since I got my machine. If you make it, I found that if you only add 3/4 of the marshmallows to the base and add the rest after the ice cream is finished you get these nice streaks of marshmallow that taste and look great. Also, cut the marshmallows into smaller pieces prior to toasting them and take the time to toast them as much as possible, you shouldn't see any white untoasted areas. Doing this really increased the flavor in the finished ice cream.

    I finally got around to making this. It surpassed your animated description! As an experiment, I mixed in a few mini chocolate chips and a handful of golden grams cereal to half of the batch.. Fantastic recipe, thank you!

    1. Glen unashamedly licking the spoon once a custard/batter has been transferred from its mixing bowl.

    I might try mixing in chopped milk chocolate bars and graham crackers to make S'mores ice cream.

      You should pour tempered chocolate into the ice cream maker while it was turning, and fold crumbles of graham crackers after it was done churning into the "soft serve" texture. You'll get nice crispy flakes and shards of chocolate and your graham won't get as soggy.

    Thanks for the tip about the powdered milk! A friend of mine also adds powdered heavy cream, which is surprisingly not too expensive. Whenever I make homemade ice cream, I also invest in a bit of dry ice, which I crush up and pack around the churn canister, which helps keep large ice crystals from forming. Cheers!

    Thak you so much for this video! I had a cone of a flavour called Campfire Cream at a little shop in Bloomfield about 16 years ago, and have dreamed about it ever since. I could never make one that tasted the same (I should have thought just to melt the marshmallows into the custard!)

    Glen!!! I love this recipe. The ice cream is so unctuous and silky smooth. I also made double vanilla (bean and extract) which was delicious. You made me dig out my ancient (made in Canada) Donvier ice cream machine. Tomorrow I will make watermelon ice cream, I plan to reduce milk, increase skim milk powder and maybe cream to compensate for watery watermelon mush. Then fresh strawberry ice cream and later this summer fresh blueberry ice cream.

    One of my favorite flavorings from Toroni is the Toasted Marshmallow, it is fabulous. I use it to flavor Cool Whip for pies, puddings, also in oatmeal, and of course my addiction ice coffee. Oh lets not forget I will add a splash to a bowl of ice cream or when making a milkshake/malt.

    The Ice cream looks so delicious 😋. Would it be okay to take maybe 1/3 of the marshmallows and save them to put in the ice cream after the ice cream machine? That way you have chunks of roasted marshmallows

    You should do a crème brûlée ice cream. I once made a crema catalana( Catalan version od crème brûlée, flavored with cinamon and lemon zest instead of vanilla) ice cream and it was amazing.
