You need to show some foods in the United States, Canada and Mexico. I recommend Texas and the entire US east coast along with all of the delicious regional foods of Mexico. There are also the Central American nations and the Caribbean Islands to check out, along with the entire South American continent. There is a whole western hemisphere of the planet that you have never covered.

Mya G Actually, apart being referred as Mombasa "raha" (happiness), the other thing it's regarded as or know for by whole country or region is that of individuals taking their time, not in rush or hurry.... people generally chilled..so the beach boys really exhibited exactly what the city is known for apart from as tourist destination....i think it's an aspect that didn't come out clearly in this video

People in other countries don't always abide by the same strict rigid time schedules that some other countries like the U.S. have. I'm assuming the fish needed to defrost as well so I don't see anything wrong with waiting for that to happen. They weren't being paid to hang out with them, they got paid to cook some food and that's what they did

Next time you visit Kenya ,checkout Tarboush open restaurant in Makadara,Mombasa they make one the best biryani and swahili shwarma. And in the streets in the evening they make beef skewers,mishkaki and octopus soup with seasonings that made my experience super fun.
