How to make the best chilli paste

    INGREDIENTS
    --------------------
    200g chilli flakes/crushed chilli
    240g garlic
    450g shallots
    Olive oil (enough to cover all the ingredients )
    Soy sauce
    Toasted sesame oil
    DIRECTIONS
    -------------------
    Peel and skin shallots and garlic. Chop them finely in a food processor.
    Pour in a generous amount of olive oil in a frying pan, warm it up with medium to low heat. Add in the shallots and garlic mixture and slow cook the ingredients for a few minutes.
    Add in the chilli paste flakes to the frying pan and gently stir till all the ingredients are infused together. Season with a few dashes of soy sauce (to your taste) and slow cook the mixture till it forms a rich and thick chilli paste.
    Turn the heat off and drizzle some toasted sesame oil. Mix well.
    STORAGE
    ---------------
    Keep the chili paste in tightly sealed mason jars and store in the fridge. Consume one jar at a time as they taste even better as they mature for a couple of days. They can be kept for 3-4 weeks.
    Always use a CLEAN SPOON when you scoop out the chilli paste paste. This would ensure the longevity of the chilli paste.

    i make this with 3 different kind of mild/fruity dry-chilli. 1 white onion and 1 TBS swerve brown. 1 garlic. OMG thats so tasty i can put in on verything . Thank you for this recipe.

    In Asia, we do the same, but we add salt and dried shrimp. The dried shrimp is dry fried, then added at the same time as the chilly flakes. And we favour peanut oil.

    Fan, you really are heavenly 😇. I’m not vegan, not even vegetarian, but I make all your recipes and they are all amazing and delicious. A chicken sandwich with your wonderful bread for lunch followed by your delicious Amaretti cookies for desert. Does not get much better than this🤣🤗.     I made this today and added ginger paste. I was pretty generous with sesame oil and soy sauce. The only thing I had was Korean chili flakes. Such a pleasant, slow burn. I'll let it sit for a day before using it.

    Thanks for this recipe. I stopped using chili paste because it was so high in sodium. With your recipe i see low or no sodium. I mentioned before one of your videos I’ve been using your recipes for my diabetes. I do the keto diet but i must watch my glucose numbers for low readings. I’ve had a few, so i add more carbs. Your recipes have helped me get through the weeks of this disease. I can’t wait to get everything i need to make this chili paste. TFS!

    Heavenly I made this today and it’s as you said amazing!! My friend is a chef and he was blown away and taken the recipe back to his pub to make himself.
    Next time I will make sure to buy larger shallots rather then ones that are the size of cocktail onions!! Took me ages to peel and cut them :)

    This reminds me of the Chiu Chow and Laoganma chilli oil/paste I was addicted to a few years back. I'm going to try making a small batch tonight, but I will have to use red onions instead as that is all I have in the house. Thanks for the recipe.
    Update: Well I managed to find some white onions and made enough for 1 jar and it's fantastic already. I couldn't stop taste testing it and I bet its even better with time.
    I thought about adding the fermented black beans as I have them, but I decided to do that another time. :)
    So simple! I will definitely be making it again.

    I had to laugh at the end, as you say "put a dollop of chilli paste on the side" and then proceed to put the equivalent of a small ladle full! You are clearly "chilli mad", just like my wife.
    I will definitely have to make this for her, as I'm sure she would love it! 41 years ago, I convinced a little asian gal from Christmas Island to marry me, and making yummy things for her like this helps to keep the romance going. She spent 3 years in the UK, and has a slight British accent (not as strong as yours, but it's still there). Her voice is not quite as deep as yours either, but I found listening to a number of your recipe videos very comforting, and kept me thinking fondly of her while she is away at work and I work from home.
    Love your recipes, and will be trying the "french Fries" tonight. I'll let you know how it goes!

    Looks great. Never seen it made with soy sauce before, nor with olive oil. Never seen it served with tofu in that way, and of course the avocado...Can't wait to try it.

    I live your channel, I have been watching it a while and I live your recipes!!! I was wondering if you could clarify something for me. You said you were going to use 3 large shallots but in the recipe it says 450 grams. That was a lot of shallots. And 200 grams of garlic was 2 heads and not 3. Should I go by weight or by what you were doing in the video? I’m making it right now and wondering if perhaps I should blitz another head of garlic in there.

      Hi Tammy, ginger would be a nice alternative. Also if you're ok with spring onions it's a good options too. You can also simply use chilli flakes only. Season the same way then you end up with pure chilli paste.

      I've never tried that since they can be kept in the fridge for quite a few weeks. But I presume it should be ok if they're frozen when it's freshly made.

    You mentioned adding fermented black beans to your chili sauce in a different video. I want to add them, when should I add them during the cooking process. Does it matter when?

      You add it along with the chilli flakes. Soak the dried black beans in some liquor (or water) for a couple of hours, drain, then they're ready to be used.

    I don't know where to get crushed chili like those is it the same or similar to crushed red pepper or something completely different?

      They’re sometimes labelled as chilli flakes. They’re basically crushed dried red chillis. I get mine from online shops like Amazon.

      You can get it from South Asian shops, much cheaper than on the internet and they have big bags of it too.

    I'm going to follow your recipe. But... why do you cut away so much of the shallots (so much of the tips)? There is so much of good vegetable thrown away. I see that alot in English and American videos.

    I'm pretty sure its fantastic, but it certainly isn't keto. You cant claim keto when something is just high in fat. You can add fat to anything, you can just eat a stick of butter. Where all vegan keto attempts fail is because you can not ever get 4:1 protein to carb ratio.

      You must be feeling grouchy this morning, Sorry. I find this channel helpful because she gives me interesting ways to make my food. Eating, keto or not, is not just about ratios. You do not expect every sauce to have 'correct' ratios do you? What you do with chili sauce is up to you. But if you are just wanting to dis vegans that is another issue.

      @@realperson6201 My post was a year ago. And true, sauce, spices and flavorings etc should not be subject to the strict macro ratio. Just put it on some pork and you're good.
