Burnt Garlic Seafood Fried Rice ( Restaurant style)

( Restaurant style) This dish is packed with flavors from garlic, prawns, fish, and squid, combined with colorful capsicum and a blend of sauces.     Ingredients:
    1/4 cup finely chopped garlic
    4 tbsp cooking oil
    1 tsp finely chopped ginger
    3 green chillies, finely chopped
    2 tsp white part of spring onion, finely chopped
    3 tsp capsicum (red, yellow & green), finely chopped
    1 tsp pepper powder
    1/4 cup cooked prawns (cut into small pieces, if large)
    1/4 cup cooked and minced fish
    1/4 cup cooked squid (cut into small pieces)
    1 tsp spring onion
    3 tsp soy sauce
    2 tsp chili sauce
    Salt to taste
    1-2 tsp chili flakes
    1 1/2 cups cooked Basmati rice (95% cooked)
    1 tsp vinegar
    1 tsp sugar
    1 tsp celery
    1 tsp spring onion
    1 egg
    ( 1 cup= 250 ml )
    Instructions:
    1. Prepare Burnt Garlic:
    Heat a pan with 4 tbsp of cooking oil.
    Add 1/4 cup of finely chopped garlic and fry until golden brown.
    Remove the garlic from the pan and drain the oil. Set the garlic aside.
    2. Cook the Seafood Fried Rice:
    Pour the drained oil back into a large pan and heat it.
    Add 1 tsp finely chopped ginger, 3 finely chopped green chillies, and 2 tsp finely chopped white part of spring onion.
    Stir and cook for 1 minute.
    Add 3 tsp finely chopped capsicum (red, yellow, and green) and 1 tsp pepper powder.
    Mix in 1/4 cup cooked prawns (cut into small pieces), 1/4 cup cooked and minced fish, and 1/4 cup cooked squid (cut into small pieces).
    Add 1 tsp spring onion, 3 tsp soy sauce, 2 tsp chili sauce, and salt to taste.
    Sprinkle in 1-2 tsp chili flakes and stir well.
    Add 1 1/2 cups of cooked Basmati rice (95% cooked), 1 tsp vinegar, 1 tsp sugar, 1 tsp celery, and 1 tsp spring onion.
    Stir and combine all ingredients for 5 minutes on high heat.
    Finally, add 1/4 cup of prepared burnt garlic and continue cooking for another 3 minutes.
    Turn off the flame and transfer the burnt garlic seafood fried rice to a bowl.
    3. Scrambled Egg Topping:
    Heat 1 tsp of cooking oil in a pan.
    Crack an egg into the pan and scramble it, adding salt and pepper to taste.
    Cook until the egg is done, then sprinkle the scrambled egg over the fried rice.
    4. Serve:
    Serve the Burnt Garlic Fried Rice with Seafood hot and enjoy!
