risotto alla milanese, ricetta strepitosa

  • Prova questa fantastica ricetta abbinata a quella dell'ossobuco.
    Ingredients for 3 person:
    Rice carnaroli 300 grams
    Parmesan cheese grated 60 grams
    Veal marrow 30 grams
    Meat broth 1 and half liters
    Onion 50 grams
    white wine 90 ml
    butter 30grams
    a sachet of saffron
    olive oil a little bit
    parsley a little bit
    Finely chop the onion, the marrow and the parsley and keep them separate.
    Heat some olive oil in a frying pan and when it is hot, fry the onion.
    When the onion begins to change color we can add the chopped marrow and, as soon as it will be melted, you can add the rice and toast it for about 5 minutes.
    After that, add a little bit of white wine and let it evaporate.
    Then add a little bit of chopped parsley, the meat broth until the rice is completely covered and stir it. You can now add the saffron, a little bit of salt and cook it
    at least for 20 minutes over medium heat. Sometimes stir the rice to prevent it from sticking to the bottom of the pan.
    When the broth has evaporated and the rice is cooked, add 30g of butter and a little bit of Parmesan cheese.
    Stir it to mix the butter and Parmesan cheese.
    Your risotto is ready!
