Poor sheep! They must be frightened and tired after so many rounds of running.
They bring in new sheep after each run. They might have to cycle through two or three times, depending on how many sheep and dogs there are.

Why dont they just train the sheep to do this?
Because it's the dogs job
Because (in theory) this is a test of the dog’s and handler’s ability to bring a group of sheep through tasks, equipment, and conditions that may be encountered on a ranch. The location of the sheep, the terrain, the layout of gates, chutes, and handling equipment may change depending on the task of the day or the location on the range. Sheep can become more accustomed to certain handling tasks and equipment layouts and handling them will become easier, but a dog gives the handler the ability to work sheep in an unfamiliar set up if need be. Plus, training a dog is *much* easier than training sheep, and a flock of sheep will turn over in its entirety several times during the life span of the typical border collie.

Got a lot to learn , it aint a race and the dogs need screwing down some what racing around only upsets the sheep.
