Chocolate Mozaic Sausage

  • This week, I wanted to make something biscuit-like with chocolate mixed in. Originally, this recipe is straight from the Greek kitchen but usually contains lots of dairy, sugar, and even dried fruit. All of these set off my SIBO symptoms, so I wanted to think outside the box and use a bit of creativity.
    I created my own digestive bikkies ( I will post the recipe for this as well), and they were so delicious that I ate the leftovers as snacks during the week. They have a soft yet crunchy texture, sweetened only with rice malt.
    I got my family to try it out, too, and they were impressed at how delicious the coconut condensed milk was. I haven't tried coconut condensed milk yet, but I recommend it if you need that milky, sticky texture!
    You could easily cut these up and eat a slice with your tea or coffee. They are a great pick-me-up that eliminates those chocolate cravings.
    Give this a try. It's easy and stays fresh in the fridge for weeks. But I highly doubt it will stay there for that long!

    Ingredients
    - 250 grams / 8.8 oz butter melted and at room temperature
    - 2-3 tablespoons rice malt syrup
    - 1 tsp vanilla stevia (if you want it sweeter)
    - 1 vanilla bean or 1 tbsp vanilla essence
    - 6 tablespoons unsweetened cocoa powder sifted
    - 385 grams / 13.5 oz petit-beurre biscuits or Digestive (I made my own. Recipe to follow this one)
    - 1 can condensed coconut milk
    - unsweetened cocoa powder to serve
