Foraging Edible Honey Mushrooms - Identifying and Cooking Armilleria Mellea

  • Wild mushrooms are popping up all over the farm, notably some edible varieties. Most prolific among them are the honey mushrooms, armilleria melea. We wanted to make a video about identifying and cooking these delicious mushrooms.

    We love these and eat the stems with them. This is a Fall variety for us in Michigan. I tend to pick them as small "buttons" because the larger they are, the more tiny white larvae they have. Just leave some in a bucket in your garage for a couple days and you'll see what was not noticeable when first picked. Once cooked, they freeze well in freezer bags. Add them to stews, casseroles, etc. Very tasty. Don't mind the slimy texture!

    My mother would boil them with an onion first then fry them up again with onion and butter. They were kind of slimy but I loved them yes even as a child.

    I Ukranian, from NYS and we picked them every fall for Christmas ... when a good pick.. we would string them up and hang then on the stove to dry.......my mom also canned them.. and later froze them... can't clean them with water and freeze... anyway had them all year.. dried, great flavor, canned and frozen.... so, if you get a bunch try some of what I said. Makes delicious soup

      If you've heard of Michael Pollan's book, "The Omnivore's Dilemma," it is the chapter on wild mushroom foraging that gives the book its title. Even though we were 99% sure these were honey mushrooms, I was still the guinea pig eating a small amount the first day. Thankfully, no issues whatsoever, because those things grow by the hundreds on our property! Thanks for watching and commenting - Brad

    Honey mushrooms fruiting on coniferous trees will make you go #2 like crazy. I forget where it was mentioned but you could dry them first for the ones coming off the coniferous trees like hemlock or pine for example before eating them and will greatly mitigate digestive upset. When you eat honey mushrooms fruiting off of hardwood trees like oak, maple, birch you should not have any digestive complaints.
    I’m going to be pickling mine and they say the flavor is top notch in comparison to morel mushrooms. I think they taste outstanding and when weather conditions with high humidity and ample rain are present they can be found fruiting all over the place in vast quantities.

    Very educational. Thank you. Went out looking, did not find the edibles, but those mushrooms sizzling in your frying pan prompted me to go out and buy some giant portobellos and I stuck them in the oven to bake with some cheese, bacon and tomato slices atop.-p.s. Faith in times of chaos better than no faith in time of peace. Deo gratias. Perfect.

    Next time you come across an abundance of honey mushroom like that, you should try pickling them after the boil. Very delicious and they'll last longer.

    I had not heard of the Honey Mushroom before, although very familiar with the Morels. Outside my back door were a Maple and a Sweet Gum tree. They were volunteers that came up beside a patio and screened-in porch. They were pretty big when I bought the house in 1998 and over time the roots grew under the screened porch and pretty much destroyed it. I took the trees down five and eight years ago, the Maple the last to go. The Sweet Gum stump is pretty well rotted away and the Maple is starting to go, but I found the Honey Mushroom clumps, identified them after harvesting them. Overnight, about 30 hours after picking them, I went to get them so I could clean them. Big disappointment, they had turned to a soggy mushy mess, and I had no chance to try them.

    Honey mushrooms can be seen growing on living wood as well although the tree likely won't be alive for very long because they are parasitic fungi.

      Trust me, so did we. We've really only been foraging mushrooms for a few years, so we always want to do proper identification. By the time we noticed the honey mushrooms on our property, identified them and did a 24 hour spore print, many were starting to pass their prime. There were hundreds of them in our woods. As you say, in the future we'll be looking for them early! Thanks for watching and commenting!

    Great video. I passed many of these knowing I could eat them, mostly because they were so new. Early mica mushrooms look quite similar in the early stages. I usually field spore print off a lower cap from the upper portions when I do find these. I still don't always trust myself. I just like to mess around with my health with success.

    These mushrooms are very popular here in Russia. But most people boil them first before putting into skillet. I don't boil.

    Is it important to wait 24 hrs for the spore print? Couldn't you tell after an hour?

      Painting of mine from 1993. That one actually hung in the NC Museum of Art for what used to the be the Triennial Artist Exhibition. Right after that show a painting by Titian hung on the same wall. So that was pretty cool indeed.

    Honey mushrooms in my area have little to no flavor and kill our avocado trees, they are a serious pathogen in orchards.

      Is it a possibility that the mushroom might think that the tree needs to be dealt with and purged? Like the avacodo is the foreign entity that is hostile
