Tillamook, here in Oregon, makes orange AND white cheddar!!! My son is a truck driver & has delivered Tillamook cheese to Wisconsin!!!!
I always buy Tilamook cheeses - especially their extra sharp cheddar.
We’re cool with that because in the long run WI will always win the most cheesemaking awards. lol

A few years ago I was traveling through Portland Oregon. It was dinner time and I went to the brewpub at my favorite brewery. On their menu, they had fresh ocean salmon that had been marinated in a thinned down, garlic and ginger seasoned shiro miso paste. It came with a small salad with miso dressing, roasted potatoes, and the most incredible chocolate parfait for dessert. I am hoping to go back there someday very soon. It was amazing.
I live in Oregon's Willamette valley, blackberries grow wild pretty much everywhere. Every ditch has a huge blackberry patch.
They are delicious.
I LOVE Tillamook sharp cheddar. Also get it in Oregon at the Tillamook cheese factory.
We also get a ton of salmon.
If im going to eat salmon, i prefer it fresh caught, because we fish and have it. Then eat it uncooked in a poke bowl.
Blackberries are kind of a nuisance here in Oregon aren't they! But boy do they taste good (when we have a hot enough summer). When I was a kid I had a salmon almost pull me into the ocean, thankfully my father caught me by my ankles before I went in. I wasn't letting go of that fish! lol.
Oh yes. When I lived in Washington, the wild blackberries were just there, and rather than trying to keep them alive and productive, like stuff I planted, I had to expend effort to keep them from overtaking my entire yard. Just walk out into the yard first thing in the morning and grab a bowl full to eat on cereal, oatmeal, pancakes, whatever. Also had wild huckleberries and salmonberries, though they were less "hardy" and easier to control. Work and other things took me away from the PNW years ago, but I still like to eat blackberries when I visit. I just cannot bring myself to pay grocery store prices for them out here.
@@rs232killer , Same when I lived in Texas. As an arborist, we took down many Pecan's, and had tons of the nuts when we cleaned up the yard. After moving away I hated to pay for them in any market!

I spent my childhood in a village called Cayuga in Ontario, Canada in the 70s. It was pretty rustic! There were multiple bushes of blackberries at the back of our yard which backed onto a wild space. In season, all of the neighbourhood kids had purple fingers and mouths! Yummeeee!!!
By the way my sister uses arrowroot to set fruit dishes... It sets while keeping the fruit juices beautifully clear. Yay! You're welcome to that little hack. Arrowroot is a kind of starch which can made from the rhizomes of certain tropical plants. ⭐

Could look better, they always fake nailing the temperature, and they should not promote the wasteful use of aluminum foil.
We had a yard with a lot of berries--primarily Boysens, with some Logans (great mix!). We were in the SF Bay Area. My Mom's trick for berry pies--of which we ate LOTS in the summers--was to mash up some of the berries (maybe 1/2 c) with the sugar, cornstarch, and a little lemon juice (we had a couple of trees) and heat them on the stove to activate the cornstarch. Then she'd pour the mixture over the berries in a pre-cooked shell. No top crust. I think she baked it briefly, but I'd have to check her recipe, which I don't have with me. Then she'd chill it until we were through dinner. Once in a while, there'd even be a piece left for the next day.
Tried both recipes and they are amazing!

They don't give a shit about the environment if you haven't noticed; aluminum foil every chance they can, and plastic wrap every chance they can. -Yes there are easy alternatives.
If you don't like it, maybe just don't use it yourself.

Tillamook is always my choice of cheese.
Try the pie crust with an egg. The flakiest, easiest to make crust is using butter flavor crisco, and an egg, and vinegar. I did a "test kitchen test" some years back, and tried dozens of pie crust recipes. My rule was, if it was tasty all by itself, it would be an amazing crust on any kind of pie. Once I got down to 3 finalists, my second test then was, how easy is it to repeat results. The Egg crust won hands down, it's not necessary to keep everything cold, you can use it immediately, OR make it ahead and refrigerate. It does not fall apart or tear, it's not super dry to work (like yours was) and it's far more flaky than All Butter pie Crust. You can search Never Fail pie crust... it's easy to find recipes. Give it a try.
I like a mixture of lard and butter, and vodka to make my pie crust. It’s super easy too, but the ingredients are frozen. I’ve been making pies too long to change.

In east Texas sugar is used to thicken the cobbler.
Wonder if you could sub the all purpose flour with almond or coconut flour and stevia for sugar to make it low carb? The blackberries have some carbs but not from refined sugar so minimal impact for we diabetics. Also high fiber content which is good.

I don't know Cabot's rating, but they recommended six of the seven cheeses they tested and I'm guessing Cabot wasn't the worst one. I'm used to buying white Cheddar from Vermont or New York, but I saw a map of the US showing which cheeses are popular in various places. I never realized that only in the Northeast do people prefer the white cheddar. Everyone else apparently goes for the orange one.

I'm sorry, but if you're in an ordinary grocery store, then go for the Cabot, no questions asked. Cracker Barrel is fine but Cabot is the best of the accessible brands.
As long as you're making an Oregon-style pie, you might as well get Tillamook cheddar. It's become more and more available recently -- you can even get it at Target nationwide now.
Cabot isn't really readily available on the west coast. I have seen it only in a couple of stores and only a couple of types.

I use 6 cups of blackberries when I make blackberry pie and it still turns out perfect.

I just steam my broccoli, then butter and a tiny bit of salt to eat. Steaming helps save the flavor, but the broccoli doesn't get too soft!

Making lattice work on a pie topping is not hard - my mom taught me how to do it when I was a kid!
Nothing they do is hard.
I actually know how to do a proper lattice top crust but sometimes doing it is a pain cause it's a bit tedious. Doing it the easy way looks just as good and unless you're entering a contest nobody is even going to notice.
put some of that cheese on the broccoli before you put the foil on it to melt and you kids will not only eat it but ask for more but try using a good Welsh cheddar
People can be genetically opposed to broccoli. -Some taste it as very bitter. -Same with coriander aka cilantro (some taste soapy).
Good cheddar doesn't melt very well, as a rule.
I like garlic salt and/or dried Italian seasoning on my roasted broccoli. So simple, but adds a nice punch of flavor.

I’m sure our Oregon berries make absolutely delicious pie, but please consider uploading videos like this during summer when, you know, actual Oregon berries are in season. Mine are long gone and this sure would have been great for a summer BBQ.
I think they try to air the show on television that way, so that the US ingredients such as summer fruit are available, and then when they've all been run on television they upload them here.

In the Eastern U.S., from Maine to Florida, you cannot find sweet, ripe blackberries in any grocery store, including the more expensive ones. And if the blackberries aren't sour, then they're tasteless. A real shame.

YOu have skin-filleted salmon. Real Pacific Northwest salmon retains its skin. Putting down more olive ol or butter on the pan for crisping up the skin and the skin oils - and you have some real-deal Pacific Northwest salmon ... and you need corn on the cob !!!
OK you really screwed up with the cheddar cheese. There are vast hordes of WA, OR, and CA states cheddar cheese (mild to extra sharp). This test totally needs to be redone with real Pacific Northwest cheese !!!
It's like American beers to me; the best cheddar I've had was from a small farm which has quadrupled in size for it's cheese tasting room. The best American beers are craft beers from small brewers.

@@joeymama4666 Tillamook cheese, Tillamook, Oregon is the most prolific up/down the entire West Coast and possibly east to the Rockies. Otherwise (aside from a cheese monger shop), Trader Joes, Sprouts, and Whole Foods would have the greater option for craft cheeses (goat milk cheese, sheep milk cheese, cow milk cheese) from the Pacific Northwest. Sunnyvale (near Yakima) is the biggest cheese producer in eastern Washington State. Marin (North Bay SanFran) and Humboldt County northern California produces some great sharp cheddar cheese. Not sure, but it is entirely possible for Safeway, Target, and Walmart to have some options - even (amazingly) the Dollar Store or 99 cents store might have some small cheddar products.

I agree. I've used tapioca forever for blackberry pie because you get less clouding. I recently switched to the tapioca starch when I discovered winnco has it.

I don't use raw eggs in my pies I melted butter let it cool add sugar and cinnamon wait till 5 minutes pie is done I brushed quickly back to the oven to see golden color

You're thinking of fluid ounces. They're using scale weight, and also giving a volume for viewers who don't have a scale. 20 *ounces* (not *fluid* ounces) of blackberries occupy about 4 cups.
A cup of water is equal to both 8 fluid ounces (in volume) and 8 ounces (in weight), but that's just a coincidence. You can't assume a fluid ounce (of volume) is the same as an ounce (of weight).
BTW, 20 ounces = 1 pound 4 ounces (1.25 pounds) = 567 grams.
Making a blackberry pie is not different than other berry pies. They all have some starch to thicken them. Personally this pie looks much too thick and the crust too thick and doughy on the fruit side. There isn't anything difficult about making a "real" lattice top! Who waits four hours to tuck into a freshly baked pie? Making a fruit pie so stiff it does not ooze, is certainly not a goal most want.

Always wonder what people used before the invention of plastic wrap and aluminum foil. We should go back to that. As much as I enjoy these cooking shows, they are some of the best promoters of excessive, unnecessary use of plastic. The Food Network is the absolute worst.
They're not "promoting" these things. They're doing what the average American does. We like our aluminum foil and plastic wrap. And there's no good evidence that we shouldn't use these things either, except for the loony fringe people who think every product of this kind is evil and destructive.

The fact that much of what we wish to believe is recycled, is not, and instead ends up in landfills is a fact. Unlike people who choose to bury their heads under a rock and live in a bubble, some of us choose to live in reality as ugly and unpleasant as it may be. Making the effort to create less garbage is a good thing not a bad thing. Draping a simple cloth would’ve done the trick in both of these recipes, but then the plastic and aluminum companies wouldn’t make any money, would they.

I like these videos, but I would like it a lot better if the two hostesses would cut down on a lot of the incessant giggling. I was watching one the other day where one of them started giggling at the word 'cornstarch', which came across as downright idiotic and quite annoying. It's really not necessary.
That's all well and good, but who has enough space in there fridge, it would be nice to have all that space. you need to be like regular kitchens, that don't have all those things. who can afford all that. we have to work with what we got and can afford. you guys aren't real. it's all a show......
