      I love homemade fried rice. Unfortunately I never have day old rice so I use a trick I saw watching Racheal Ray. After I cook my rice, I spread it on a sheet pan and let it quick cool. It works when you want fried rice on the fly and none in the fridge

    Ohhhh we needed this!! Fried rice is VERY special to our family. When my Dad proposed to my Mom he gave up his meal ticket money to buy her engagement ring. So in order to eat at school for that year he found a Chinese Restaurant near their school and he always ordered a huge portion of fried rice. The Mom that cooked there got to know him, took him under her wing and was so kind to him. When he finally graduated, his grandmother came out & wanted to meet her. I wish I had a picture of these 2 grandmas one speaking Danish, one speaking Chinese and both having fun cooking fried rice together in her kitchen! Somehow Gram got the recipe down and we still have it. I need to frame it!

      Flo Lum My Mom would make it for special occasions and I still think of it as 'Engagement Rice'. I try to make it for Dad now too. Happy memories.

    what do I have on hand while I wait in isolation for my grocer to deliver my order in ten days? Among other things, I have white rice, a dozen eggs, onions, frozen peas, carrots, and my essential cooking sauces... and this morning, the lightbulb went on and I knew it was time to rewatch this one ;)
    Never knew I'd be so grateful for Flo helping keep me well fed with simple, ordinary pantry and fridge supplies during the covid stretch 💜

    I tried this with quinoa instead of rice (to lower the glycemic index) and it was fantastic! The same principle applies to use day old quinoa. I tried it with fresh and day old and the day old held up better. Plus it tasted better. You could also do this with riced cauliflower and it's just as good. Anyways, just thought I'd throw that out there in case anyone was trying to avoid rice and looking for alternatives.

    I hated rice until I was in the Air Force and they sent me to Thailand for my first overseas tour for a year. I met one guy who was staying in the hotel the government put us up in and he invited me to try it. After a few spoon fulls I was hooked and ordered a bowl full of it for myself. After that I was hooked on fried rice and have been eating it since then. Dude is loving the dish you made and is enjoying it so much.

      @@FloLum I didn't like rice because our mother use to cook it for breakfast and after I was grown up I found that she didn't like it, but she fed it to us since she could not afford to feed us regular breakfast.

    Always loved fried rice and it is so easy to make even if you don't really know how to cook. You can use anything i.e. spam, chinese sausage, ground pork, corn kernels, etc.

    So old rice is the key. I love fried rice and cook it regularly but I made it with fresh cooked rice. I could never get it right. Thanks for the tip. 😊

    I love fried rice. I fell in love with it when we were newlyweds. It was cheap and easy. We still love it, and make it, usually with leftovers from the fridge, along with frozen peas and carrots. I also sprinkle a bit of toasted sesame seeds in it.

    Dude, you are one lucky guy... I have said this before, love your videos and you make me so hungry watching you. Thank you Flo for sending this link to me. I do not know how I missed it before. For some reason, fried rice is one dish I just can not get the hang of. I don't give up, lol. I keep "stir-frying" away. It is mainly the rice, come out a gummy mess, lol. So I am going to make a smaller amount till I get it down pat. Again thank you Flo and Dude..

    Great video guys. My stepfather was from Guam and he taught me how to make fried rice. It's one of my favorites especially when I have fresh shrimp. Living in SC on the eastern coast I get fresh shrimp at the docks with the heads on. Just picked up 55 lbs for me and a friend lrg to extra large $4.00 a lb. Had rice tonight so it is fried rice tomorrow. Yum!!!

    Oh my gosh Flo, this is how I cook my fried rice since I always have Chinese sausage. By the way, I'm here in Northern Nevada, over 40 yrs in the U.S.. from the Philippines. My American hubby loves Asian food, a mashed potato kinda guy but loves fried rice as well..esp if I threw in shrimps...oh he's in HEAVEN! I had just found your channel, since I have a small portion Chinese blood in me, I love Chinese food! So, keep on cooking & I'll keep on watching! 🙏🙏🙏

    Love your videos. I make fried rice as the mood strikes. One technique I sometimes use is to put the beaten raw egg in the pan while I am frying the rice. I got this idea from one of my Chinese cookbooks which says that it comes from a certain region of China ( which I don't remember). Also I will sprinkle a little sesame oil in for an added flavor punch. Thanks for all you do

    Oh my goodness, how funny that you mentioned fried rice with spam! I posted in your newer video the other day about the very same. My husband really likes it and it's the only reason we started to buy spam after years and years of never even thinking of it. When I was a child in the 50s we used to have fried spam, eggs and chips back in England, a cheap and fast weeknight supper for people who worked long days, but somehow after coming to Alberta it slipped off the radar. It's actually pretty convenient to have a can in the pantry for when there's extra rice, which I now make on purpose. 😊

    My dad was the cook in the family, we would not be able to open Christmas gifts until we ate something first. Dad would whip up some fried rice in no time. We might not have eaten for the whole day save for this homey Chinese meal.

    Just got the last of my order today, the ladle, grease screen and hot pot strainers are such nice quality, thank you for taking the guesswork out of selecting them! It is cold and foggy here so I made split pea soup and now wish we were having fried rice for dinner instead. Hubby saw me watching the Spam fried rice video a few days ago and it made him hungry for Spam so he has been frying up a few pieces in the morning (the Jalapeno variety) with his eggs and loving it. The smell though....like frying hot dogs. Haha! Thank you for your heartfelt message. {{hugs}}

    Ever since I started going to the Philippines garlic fried rice has been a favorite of mine. Any Fried rice is the best because so quick to make.I use a flat cast iron pan when traveling so that holds exactly enough rice for 2 people. Lodge makes a cast iron wok but I think that might be to heavy to use. I just have a carbon steel one like you do.

      Actually, my wok is stainless steel. I bought it a long time ago when I didn't know better and just wanted something I can keep clean without having to season. But it's a great wok. Stainless steel and hand made. 😊

    Made this today! Loved it! I've never used jasmine rice before starting to follow your videos. Love it! My chinese sausage was all pork and when I bought it, I didn't know if I would like it, but wanted to follow your recipe as closely as possible. It was *very* tasty. I'll have to look closer next time to see if I can find a chicke and pork mix. Following you lead, I used "what I had" so, instead of peas, I had a frozen Asian vegetable mix so, I used that. Of course, I added a little more soy sauce than you did - both during and after cooking. I didn't "drown" the dish, but as I said in a previous comment, I *love* soy sauce. Anyway, recipe is a keeper!

    I think I saw this Chinese sausage at Costco a few years ago. It was just in one of the isles, not in the refrigerator section. So they must be packed shelf stable until you opened them. ( you might have started to tell us about them then talked about your scissors)

      I have never seen Chinese sausages at Costco but people have been saying they do carry them. I don’t think they have them at the one I go to.

    HI Flo and Dude, Fried Rice is one of our all time favorites as well. Have you ever tried Portuguese sausage with it? It's really good too, not sure if they have that in Vancouver. But if there is a grocery there that sells "Hawaii" foodstuff you should be able to find it.

    I love(d) Fried Rice before my Keto diet started...LOL...Spam fried rice! Cool, dude!! Dudess (Flo)..although Dude calls you (Flo) "Dude"..LOL, what is with the short sleeved T-shirts on both of you in January in Vancouver? I'm freezing, with a Fleece in US/MD....       And, BTW Flo, I got the Iwatani Corporation of America Iwatani of America burner...It is awesome. I grew up on a gas stove, but have a smooth top electric stove, which is fine, but I prefer gas...this burner is awesome...a lot less expensive than buying a new stove and running a gas line. I rarely use more than one burner at a time.

      @@dudelum Well, I understand the spam and eggs, but I try not to crank the heat...LOL...although, I must admit I've been off work the past couple of days (sick) and cranked the heat up to 66 (which is the upstairs temp)...but I'm mostly in the basement...so it's like 61...and I'm 66 (old)...guess I need to try the spam and eggs to get me warm...:)

    Fried rice is in my arsenal of go to recipes and foods. Sometimes, I will use green onions instead of chopping a whole onion, it all depends on how hungry I am and how fast I want eat. 🍚

      No... your best bet is an Asian market that has a cooked food section or a Chinese restaurant that specializes in noodle soup and fried noodle/rice dishes.

    Fried rice first developed during the Sui Dynasty in China and as such all fried rice dishes can trace their origins to Chinese fried rice. In the West, most restaurants catering to vegetarians have invented their own varieties of fried rice, including egg fried rice. Fried rice is also seen on the menus of American restaurants offering cuisines with no native tradition of the dish.

    Fried rice with lup cheong is deluxe in my books, I'm with Dude and use Spam. What brand is the Lup Cheong? My family says there is a really delicious brand from Canada that we should buy to use in making joong.

    There are some things i hate from cutco, like their chefs knife, but those kitchen shears are the idea shears. Also the vegetable knife and spatula spreader, awesome....my sister and brother-in-law sell the stuff, so I've used a lot

      Yeah... I made them let me try the knives (which apparently is a no-no) and I didn't like the chef's knife either. I'd like to get their steak knives though. I think those would be handy!

      @@FloLum they really are nice, or i should say we have the table knives, which are the same but without the point; cuts steak just fine. Vegetable knife is great too. Long square shape but with a reverse front point

      I use Dollar Foods brand but I think they might just be available in Canada. Not sure about the US. You can find them in the Asian markets. I wouldn't buy them in regular supermarkets unless they have a large selection of Asian foods. If you go into an Asian market, you can ask them which brand they like. Hope that helps!

    Get a piece of aluminium foil, fold it a few times, use your blunt scissors to cut it multiple times to see if you can sharpen it.

    I am *so* in for this recipe. Will even try to find the Chinese sausage! But here's where you'll cringe, Flo! I *love* soy sauce so, gotta have some soy sauce on the finished product. :-) My son would love this too. How about a recipe for "Chicken Balls" like they make in Chinese restaurants to go along with it? Tell Dude I want Chicken Balls, not SPAM Balls! LOL

      LOL! I remember having chicken balls with the nuclear red sauce as a kid. My dad had a friend who owned a westernized Chinese buffet restaurant and I always had to have a couple of them.

      I use Dollar Food brand. They are the Chicken and Pork Chinese Sausage. Make sure they bring you 50lbs worth. LOL!

      I use what I have so I usually make Jasmine or Japanese rice and both are good for fried rice. I think it’s best to use day old rice though.

      Thanks, Randy! My wok is stainless steel so it doesn’t need seasoning but if you are using carbon steel, then definitely.

    I'd love to be able to find that sausage.
    The rice gets the flavor from the onions and saugage. 👌 got it, but I don't have and can't seem to locate Chinese saugage. How to get a more flavorful rice without the saugage? When I wing it fried rice , I tend toward chicken, or pork, ginger, garlic, green onions, sometimes a minced shallot, eggs, frozen peas/carrots, dark soy, sometimes 1/4 -1/2 tsp toasted sesame oil. My shrimp fried rice is never Amazing and never flavorful so I rarely use shrimp. I suppose shrimp paste might help flavor it.

    Finally someone for whom 2 tablespoons of oil MEANS 2 tablespoons of oil, ish… close enough! I'm so sick of watching people say "add 2 tablespoons" and then they pour in, like, 1/4 cup.

    I’ve never tried the random Chinese sausages they have on the isle in Costco where they have the spices but I will grab some now.

      Yep, Costco sells chinese sausage and it comes in two packs and they are reasonably priced.

      Hm... Not all Costco's carry the same items. I have not seen Chinese Sausage at the one I go to. We do have a location that has a lot more Asian items. Maybe I will check that one out.

    Now I know why every time I’ve tried to make fried rice I messed it up. First, day old rice, ah ha. Second mostly cook your eggs first then add back, double ah ha! Can’t tell you what A mess it is when you add raw eggs to the rice at the end. 😆🤣
