♥FULL RECIPE:
INGREDIENTS:
• 8 10x7 rectangles of banana leaf
• 1 cup vegetable broth
• 1 tablespoon achiote
(annatto powder)
• 1 teaspoon Sazón spice blend
• 4 cups peeled and cubed
yuca root
• 1/2 teaspoon Himalayan
pink salt
• 8 15x10 rectangles of
parchment paper

FILLING OPTIONS:
1 cup Picadillo or 1 cup mixed vegetables
INSTRUCTIONS:
1. The banana leaves must be wilted by exposing them briefly to heat to make them pliable and easy to fold. I use a gas range on medium heat and carefully pass the leaves through the flame a few times until they become pliable. You can use the same technique on electric range coils, or you can place the leaves in an oven for 5-10 minutes at 250°F.
2. In a small mixing bowl, whisk together the vegetable broth, achiote, and sazón to make the achiote broth.
3. In a food processor, add the yuca, salt, and 1/2 cup of the achiote broth. Set aside the other 1/2 cup of the achiote broth. Process until all the ingredients are well combined and they form a batter.
4. Lay the parchment paper on a flat work surface, with the long edge facing you. Place 1 of the wilted banana leaf pieces in the center of the parchment paper with the long edge facing you and the dull side facing down.
5. Brush some of the achiote broth into the center of the leaf. Place 1/3 cup of the yuca batter into the center of the leaf and use a spoon to spread the batter. Form a small well in the center and add 1 tablespoon of the filling to the well.
6. Fold according to to video instructions.
7. For best results, freeze the pasteles overnight so they keep their shape.
8. Fill a large deep soup pot with water, bring to a boil, add the pasteles, and boil for 90 minutes. Ensure that the pasteles stay completely immersed in water throughout the cooking time. Add more water if needed. After they are fully cooked, untie the pasteles, and serve hot.

Loved that you shared this recipe! I loved eating tamales around the holidays growing up. Tamales are wrapped in corn husks and are made from masa. I totally want to try the pasteles!

Oil free in Puerto Rico😱 ??? that’s a hard one. Healthy options: Fresh Market in Condado has amazing vegan options in the cafeteria. Cocobanas cafe has really good vegan options as well. My friend Miraida has a meal prep company she cooks whole foods only and is delicious check her out:
