Pork and veggies stir fry

  • Simplest yet delicious weekdays dinner. Pork and veggies stir fry served with basmati rice.
    Ingredients
    Pork chops ~ cut in small pieces and skin removed
    4tbsp Olive oil
    2 tbsp Soy sauce
    1 tbsp Rice vinegar
    Garlic cloves ~ roughly chopped
    Ginger ~ sliced
    Carrot~ sliced
    Red pepper
    Onion
    Bok choy
    Chilli
    Spring onion
    1 tbsp sugar
    Salt to taste
    Instructions~ in a non stick pan fry your pork until all water evaporates, add olive oil fry for about 5 minutes, add onions, carrots, garlic and ginger, soy sauce, rice vinegar, salt, sugar, fry and cover for some few minutes, add red pepper and the bottom parts of spring, bok choy, repeat the previous step when everything is cooked, add the green part of bok choy, stir and add the green part of spring onion and chilli. Serve with basmati or jasmine rice, sprinkle some sesame seeds and enjoy
