The Best Granny Smith Apple Blackberry Pie!

  • Pie Crust:
    Flour - 2/12 cups
    Butter- two sticks
    Salt 1/2 tbs
    Ice Water- 8 tbs
    The Pie:
    Apples -8
    Blackberries 1/2 cup
    White Sugar 1/2 cup
    Brown Sugar 1/2 cup
    Butter-1/2 stick
    Corn Starch 1 tbs
    Cinnamon -2 tbs
    Lemon Juice 2 spoon
    Egg 01
    Put the flour, salt, and sugar in a food processor
    Mix well
    Cut the COLD butter into small pieces
    Add to the dry ingredients
    Pulse until you see small balls of dough
    Add the COLD water and pulse until it sticks together
    Press it together without kneading
    Separate into two equal disks
    Wrap and refrigerate for an hour
    Mix everything except the apples in a large bowl
    Peel and core the apples
    Slice into 1/4 inch (6 mm) slices
    The food processor makes this part quick and easy
    Put all the apple slices in the bowl and mix well
    I used 7 Granny Smith apples in this pie
    Roll out one pie dough an a floured surface
    You will need to press the edge cracks back together
    When a large enough roll on the rolling
    pin and unroll on your pie pan
    Make sure it is (mostly) centered and fit it to the pan
    Put the apple-blackberry filling in the pie
    Roll out the remaining pie dough
    Cut into 1 inch (25mm) strips
    Lay down half of them on the pie like this
    Fold back every other strip
    Lay a new strip on the pie
    Fold the strips back
    Fold back the strips you didn't fold back before
    Lay another strip on the pie
    Fold the strips back
    Do this until you have a woven pie top
    (it may take some ajustment to get it to look right)
    My old SD card got some errors here
    so the video of me folding the sides
    of the crust together and making a
    cross hatch pattern on it has
    been lost forever
    Brush egg wash on the top of the crust
    Place on a big baking tray and bake
    at 400F / 200C for about an hour
    Remove from the oven and . . .
    Whoa! Whoa! OK, I got it
    . . . and let cool to room temperature
    The blackberries made it pinkish
    but added a lot of taste to the pie
    Sigh! How come I can never get a good first slice?
