Are you ready for Pink Drinks? It's that time of year again- love is in the air, and cocktails are pink. Valentine's Day cocktails are always fun, but really, these pretty pink cocktails are delightful no matter the occasion. We have so much going on here, a pink gin cocktail, pink tequila cocktail, pink gin cocktail, and finally, a pink bourbon drink. Because Pink drinks are IT right now!

My suggestion for a pink cocktail that I call a "Tropical Ernie" (which is a take-off on the "Hemingway" variation of a daiquiri):
-- 2 oz straw-colored blended rum (such as Probitas)
-- 2 oz lime juice
-- 1 oz Luxardo Maraschino Liqueur
-- 1 oz Velvet Falernum
-- 1/2 oz grenadine (I use Giffards)
-- Two dashes of Tiki bitters (Bittermens)
-- Adjust for sweetness with simple or gum syrup (I use Giffards gomme syrup) or drops of lime juice, to taste.
Shake vigorously with ice and serve in a chilled Martini glass, garnished with a Luxardo cherry.

@@SavidgeKitchen Thanks! This has become my wife's favorite cocktail. Also, when out of Falernum, Triple Sec in an equal amount is a decent substitution, but the Falernum has a special funk that adds a layer of complexity that the Triple Sec does not.

Have you tried Brinley's Coconut Cream liqueur? It's a phenomenal addition (or base) for dessert cocktails. Brinley's spiced rum is great mixed with a full-strength rum (say goodbye forever to Captain Morgan and The Kraken). Their vanilla rum is also super tasty mixed with good regular rum and is also a great Tiki accent. Cheers! 23:52

I'm really interested in this coconut-Campari combo. I'm so Campari averse we actually gave our bottle away but now I'm regretting it because this is one I'd actually like to try!
