I am a grown woman an everytime Uncle clyde cooks something he reminds me of my mom an the good old days, oh lorrrd that pot bake an she also used fire untop an below like his mom, it can still be done but we just don't have the time, bring back the old food days lol, nice one Uncle

I have to honest.. I love this channel @foodienation with everything you post. But when it comes to Uncle Clyde in Paramin, I just love it even more I reminds so much of growing up especially when me and brothers would visit our grandmotter in Laventille on the Hill who would make it on a Saturday or Sunday for breakfast. The BEST times growing up.

I realized he used a whole shortening. But how much flour and baking powder? I would love to recreate this. He put the shortening in after the dough has come together basically.

We used to make this on a metal plate we called the stone. I also had a stone here in Brooklyn but can/t find it now. Seeing him break up that bake, it would go good with some salt-fish and spinach.
