    I'm of Puerto rican descent, but lived in bensonhurst brooklyn back in the early to late 80s. I miss the Italian restaurants, pizzerias, and bakeries. you're not boring, you're spot on authentic Italian. I've done your meatballs, and they were the best I've ever had. keep up the good work. love your channel.

    Looks superb! You mentioned cream - when would I add that, just to smooth it out a bit, or would you never recommend that?

    • @Cookingitalianwithjoe
      @Cookingitalianwithjoe  Před 8 lety +1

      First off you do do whatever you want or like. So tweak what I share anyway you want. Add the cream near the end because if it get too hot the cream will curdle. So right near the end, add a bit at a time to temper it and stir and take off the heat immediately after. Thank you for watching. Can't wait for the sweet marsala to be delivered but I do have a Marsala Secco which I can try. I have Chestnut mushrooms and I'd love to know what to serve with this - maybe a creamy mashed potato or would pappardelle be more authentic? Looks great - maybe just a clean green salad. Thank you, Joe.

    What brand of sweet Marsala did you use Joe.

  • @dinkaboutit4228
    @dinkaboutit4228 Před 4 lety

    Marsala is Sicilian. Chicken Marsala was invented in North American Italian restaurants at some point in the 20th century, utilizing 100% French technique.

    Should've added in those mushrooms after you took out the chicken, and get a nice color on them. Then added in garlic and shallots, not onion. But everything else is pretty on par.

      No!! That would be like putting vegetable oil in your car instead of motor oil. The marsala flavor is the whole dish silly.
