    INGREDIENTS:
    THE BASIS:
    ~ cookies 200 g
    ~ butter 82% 100 g
    CREAM LAYER:
    ~ cream cheese 400 g
    ~ sugar 100 g
    ~ vanilla
    ~ zest of 1/2 lemon
    ~ eggs 2 pcs 110 g
    ~ Greek yogurt 9% 150 g
    ~ cream 33% 125 g
    ~ lemon juice 10 g
    ~ corn starch 10 g
    STRAWBERRY CONFIT:
    ~ strawberries without stems 250 g
    ~ zest of 1/2 lemon
    ~ lemon juice 5 g
    ~ sugar 20 g
    ~ apple pectin 8 g
    COOKING
    The ingredients for the creamy layer should be at room temperature. Remove cream cheese, eggs, yogurt, cream in advance.
    THE BASIS
    Combine cookie crumbs and melted butter.
    Pour into a pan lined with parchment, seal the bottom and form a side. Place in the refrigerator.
    CHEESE
    Combine the cream cheese with sugar, vanilla and zest with a spatula. Pour in the scrambled eggs and mix with a whisk. Add yogurt, cream, stir. Add lemon juice, starch, mix until smooth.
    Pour onto cookie base.
    Preheat the oven to 150 °C / 300 °F, baking mode: bottom. Place the cheesecake on a wire rack on the middle level, and place a container of boiling water on the lower level. Bake for 1 hour 15 minutes. Then leave in the oven for another 1 hour.
    Remove when completely cool, cover with cling film and refrigerate for 6-8 hours.
    STRAWBERRY CONFIT
    Slice the strawberries and add lemon zest. Punch with a blender and rub through a sieve.
    Mix sugar with pectin. Transfer the puree to the stove, pour in lemon juice, and heat until lukewarm. Add sugar and pectin, stirring constantly and bring to a boil. Cool, cover with cling film and put in the refrigerator. Yield 230 g.
    Apply the confit onto the creamy layer and smooth it out. Decorate with strawberries and make a pattern.
    Cut with a hot or dry knife, most importantly, a clean one. Cook with pleasure 😍
