Ok the egg thing: before the society turned from mainly agricultural to industrial, people would wake up in the morning and check on their chickens and bring back the fresh eggs, it made sense to just eat them when they're fresh. Plus, since society was mainly agricultural, people needed the physical strength to do their work, so the extra protein helps. Even though society has changed a lot since, we're still eating a lot of similar dishes from back then - this is my theory on why most dishes that feature eggs are eaten in the morning.
