Made with simple, readily available ingredients like semolina (suji), milk, and sugar, it's a fuss-free recipe perfect for any occasion. Unlike the traditional French Crème Caramel, our version uses semolina for a unique and delightful texture. It's not just a dessert; it's a celebration of flavors that brings a touch of sweetness to your day. Try this simple yet exquisite dessert and treat yourself to a spoonful of happiness!
    Ingredients:
    1 cup sugar (for caramel)
    ¼ cup water (for caramel)
    4 cups milk
    ½ cup sugar (for pudding)
    Pinch of salt
    3 cardamom pods
    1 small cinnamon stick
    ¾ cup semolina
    1 tsp vanilla extract
    Pistachios for garnish
    Instructions:
    Prepare the Caramel:
    In a pan, add 1 cup of sugar and ¼ cup of water. Do not mix.
    Heat over medium-high heat until the sugar starts to change color.
    Once the color changes, reduce the heat and gently mix to ensure even caramelization.
    When it reaches a deep tea color, turn off the heat.
    Quickly pour the caramel into 8 ramekins, dividing evenly. Set aside.
    Make the Pudding:
    In another pan, combine 4 cups of milk and ½ cup of sugar. Mix well.
    Bring the milk to a boil, then add a pinch of salt, the cardamom pods, and the cinnamon stick.
    Slowly pour in ¾ cup of semolina while continuously whisking to avoid lumps.
    Cook over low heat until the mixture thickens, stirring constantly. Be cautious as the semolina can splutter.
    Once thickened, remove from heat and stir in 1 tsp of vanilla extract.
    Assemble the Pudding:
    Divide the semolina mixture among the caramel-lined ramekins using a ladle.
    With a flat spoon, gently level the tops of the puddings.
    Refrigerate the puddings for at least 2 hours to set.
    Serving:
    To serve, place the ramekins in a bowl of hot water briefly to loosen the caramel.
    Run a knife around the edges of each ramekin to release the pudding.
    Invert each pudding onto a plate, allowing the caramel to flow over.
    Garnish with pistachios and enjoy your delicious Sujir Caramel Pudding!
