    Thank you for sharing the recipe. There’s one little mistake there with Chinese ingredients, 低筋面粉 is cake flour. Also I have a question, what oven setting you used? Thank you!

    I have try use your recipe yesterday and it was delicious, it just that the mixture of white eggs and sugar is not really well mix cuz it doesn't had soft peak. Will try it again.

    I’ve tried making this cheesecake several times and noticed yours doesn’t collapse when you take it out. I find that I have to leave it in the oven at least 30min to cool before taking it out. Any secrets to prevent it from collapsing straight out of the oven ?

    Thank you for sharing the recipe. I noticed that the baking method is different from your previous one (Japanese cotton cheesecake) which leave a gap for the last 25min + 25min. Why this cake doesn’t need to? Also when you fold the batter in, not necessary in one direction? Appreciate your guidance.

      For the chocolate cheesecake you still need to leave a gap at first and second 25 minutes. You can follow your way you fold as-long the cake bake cook and nice.😊

    Hi, what is the trick to have a perfect stamping on the cake? I have a gas stove and i will count 50 seconds and stamp right away and the skin will stick to the stamp. Hope you can give me your lovely advise. Thankyou!

      @@Dyda- its more than likely a custom stamp. if you know anyone that does welding you can see about them doing one out of stainless steel. I made mine out of 430 stainless.

      You can add the same amount or less first, you can add the matcha powder slowly, mix until the colour that you prefer. Maybe different brand of matcha powder colour will have different colour and texture. 😊

      If using the convection oven, you need to off the fan function, just using the normal baking function.

    Please show us how you unmould the cake as you are using non loose pan which to me is a bit challenging not to destroy the cake..... thanks

      Hi, for non loose mould, you need to use the baking oil spray spray around in the cake mould evenly. When unmould the cheesecake, it will come out nicely.

      I unmold the cake while the cake still warm, take out from the oven, wait 1~2 minutes then unmold the cake😊

    How to remove from the Mould?

      Make sure you use butter or a nonstick spray in your pan before adding the batter, otherwise it’ll stick to the pan and won’t come out nicely. Also you can put a plate over the pan and then flip it over slowly so it comes out onto the pan without much trouble

      You take a large pan and place it on top gently and rotate upside down to remove it then do it again to flip right-side up. Idk how it comes out so perfect other than whatever awesome baking spray the chef uses.

    The beginning of your recipes ask for 38g of egg yolk and 78 g of egg whites. But in your video you have used 3 eggs. Which one do I follow? If I follow the video, then what would be grams of egg yolk and egg whites?

    I tried many times but every time is cracked, every time I tried to bake in different temperature (From 150 to 145 then 130),but no one temperature is good for this recipe, I think only the video can bake such perfect cake.

      Hi, maybe you can start from 130 then slowly increase the temperature. Ive tried this and it perfectly done. Maybe your white eggs does not mix well...
