I sometimes try to imagine which cuisine type I would be the most content to eat for the rest of my life should moving overseas was an open options. SE Asian variants wins every time. I helped a Vietnamese friend prepare (with newly self-imposed "discipline" re: measurements, etc.) about 40 recipes from his childhood memories, cooking with his mother in Saigon before the whole family had to grab a few special items and with the clothes on their backs and get the hell out in the early 70's. It was quite an adventure! I was living in vancouver, BC at the time so obtaining ingredients was a breeze. He took me places you couldn't even see from the street but also Thai and Cambodian shops. Laos was way closed up at that time, sadly. However, with the exception of Fu Qua, I LOVED it all! I could visit Viet Nam and Thai with nothing but eating in mind, hands down! And, btw, I learned a jellyfish salad that was cosmic. Alas, my health issues keep me away from all but the simplest meal preps now but I sure could eat forever! And not American modified Thai recipes in restaurants--which is stil delicious--but I know you two are getting the authentic stuff ; ) Thanks for the fun : )

I've never worked out how MK managed to remove all the flavour from their food. Truly a mystery...
