Frickin awesome I recommend salting the eggs in advance, not to make the dish saltier but to instead, make the eggs retain more flavor and liquid overall making the eggs more flavorful and bouncy.
I like to mix eggs raw with the rice before it hits the pan. Use minimal soy sauce or fish sauce instead. That way it will get a beautiful golden color when done cooking instead of having a brown color of my egg fried rice.
Garlic, ginger, shallot, thai chilies, eggs, rice, salt, white pepper, msg, light and dark soy sauce. Garnish with green onion. This is the only way it should be done.
