Mam, you should try Sambalado Original Khas Bukittinggi from Dapur Uni Rahmah. The texture is rustic, it has mild spicy taste and very aromatic, comes from keffir lime leaf. It's very traditional & authentic. It's also versatile and good as a condiment to many dish, like beef burger and noodles :)
Now we have another English man promoting Indonesian sambal, the other one is William Mitchell who produces tempe in London. I think you should met him sometime because tempe and sambal is the best combination ever. Bravo Laurence ....👏👏👏

Congratulations to Laurence for the launching of Bense Sambal. For comparison, there's sambal Oeleg made from Netherlands sold in a town name Fleet, south west of England. The taste wasn't as good as Indonesian sambal, but better than nothing. Oeleg itself means grounded.

Chili with soy sauce, red onion and tomato is to die for, you have to try it, smash it with Indonesian tofu! But you gotta fry the ingredients first before smashing it.
Sambal with oil lasts long, that sambal that you brought was sambal mentah / uncooked sambal - I do not know how to say it in English, basically no oil. It will not taste fresh for long. There are some delicious sambal...really yummy and not that spicy.
The majority of Indonesian eat with sambal, and you can explore the huge variety of sambals from regions across the country. For me personally, my least favorite sambals are the ones using sugar in it and my favorites are the ones using only ripe cayenne pepper instead of red chili, lemongrass, lime, and or andaliman.
