- Traditional Italian Style Spaghetti Carbonara
Pasta Carbonara is a classic Italian pasta dish from Rome. It is made with eggs, hard cheese - either Pecorino Romano or Parmigiano-Reggiano or a combination of both, cured pork - typically guanciale or pancetta, and freshly ground pepper. So simple, right? No onions or garlic, not even cream!
Lardons of smoked bacon are usually used outside Italy, as substitute for pancetta or guanciale. The pasta is cooked in slightly salted boiling water, then mixed with the crispy guanciale, pan-fried in its own rendered fat, with the egg and cheese mixture over the residual heat.
This dish is super easy and quick to make, ready in 20 minutes, making it a perfect busy weeknight dinner.
